It does seem to have a bit more light bleed around the edge. But being so far apart, even if the screens are unchanged, they're very likely a different run and possibly even a different supplier.
On camera, the screen looks a little different; the older one looked like the maze was a deeper blue than the newer one, which looked a little more washed out. But you said they looked the same to you, so I have to wonder if that's a function of how the camera picks up the different screen technologies. (My 20-second googling says the TFT screen tends to be brighter, more vibrant, higher refresh rate, and higher power consumption -- could be interesting to test battery life between the two.)
I'll be honest as cool as this looks I wish we would get some of the other Pacman games like Pac-Mania which I have fond memories of. I remember going to Pizza Hut with my grandparents and they had a Pac-Mania arcade machine. Pac & Pal, Jr. Pac-Man and Super Pac-man would be awesome too. What would really be cool is if they made a replica of the Baby Pac-man game which was a pinball/arcade game hybrid.
I always had high hopes for this line. Again target has these and have head them nonstop since they stopped selling them. I wished it was going to be one more when they did mortal Kombat with different decades of games like maybe one of the gun games like Terminator or or something maybe a racing wheel game like pole position possibly other food old school arcade games including a couple vector based ones like major havoc. They should really have just kept this going cause for me it was the last real enjoyable hunt I had looking in Walmart toy aisle for new games to add to my small arcade collection. Oh well

You’d be better off playing the 2600 version, you’d be better off playing the gameboy version, you’d be better off playing the Coleco tabletop. After level 4 the ghost don’t flicker white. The game has random ghost AI, the 2609 version doesn’t have random ghost AI! Playing the #1 is better!

The arcade classics Pac-Man game is the Coleco version and the Qbert arcade classics is the nes version of the game but centipede is its own version of the game

Yeah, but it’s probably the same pcb inside. Just reorder the case with a different date, and rerun the packaging with new slightly modified, screen print.
The shot where you had them both together top to top, the highlight reflection kind of made it look like one had a thicker screen bezel than the other, but for all intents and purposes it’s the same product. How are you supposed to play these things anyway? Do you hold them like a handheld, or are you supposed to put them on a surface, and pretend it’s an actual arcade machine?

What does "cash grab" even mean? I see that thrown around a lot, but if a company creates something we want, they deserve to be compensated for it and earn revenue. If I've earned cash, I grab it, too - and nothing wrong with that.

TFT panels are worse than IPS so that's the one major difference here.
