Most weight shift control trike dealers will not sell you a trike unless you already have some hours flying one. The closest instructors to Oklahoma are in Austin and Houston. New Mexico Trikes (an Aeros dealer) in Albuquerque can provide a weeks worth of training (weather permitting) and sell you a trike, if you want to drive that far and can get away for 7+ days.
Yes, the rear gear can be retracted during flight. I don't do it, although it is pretty simple. I do not believe it reduces drag significantly, and I have the larger wheels with fenders which are a tight fit behind the under-seat storage space which doubles as a fairing. The primary purpose for folding the wheels is so the trike can be more easily transported in a vheicle without neading a trailer. Search for "Alejandro Gonzalez Aeros ANT" on TH-cam to see him retract the gear on his ANT in flight.

Another awesome video. Are the rear landing gear retractable? I've heard that they are, but I never see you retract them in your videos.
