It's weirdly satisfying for Edward to receive recognition and respect from both the Templars and Assassins. It shows how much he really changed. Despite all the odds Edward emerged as a good man with a cause and a code he was willing to follow. And to me it seems Torres was grateful that his death was caused by a man of conviction (even if Torres disagreed with him) instead of a money obsessed parasite. It means that even though Torres didn't agree with the Assassins, his death meant something.

In a way, I think Edward would have been proud of Haytham, just as Haytham was in a way proud of Connor when he killed him. I'm sure he would have seen the great qualities of the man his son became.
Not even that. Torres is a person who can still respect someone despite having the opposite beliefs to them, a quality which is very rare at the best of times and almost non existent today.
