I wonder if this is the one that'll make him give the sausages a bit more space in the casing before tying it. Like...the skin is also meat, it's gonna shrink as it cooks even if what's inside doesn't.
I also don't think it helps that he literally throws it into the pan first either.

For some1 making so many sausages, he's clearly a very slow learner, that does fine, for his audience, making basic and fairly obvious mistakes. The entertainment value is only as high as the expectations of culinary ability is low.
You do know that things expand when heated right?
The reason meats generally get smaller as it cooks is because the fat is rendering out. in the case of pig guts* however they are usually made largely of connective tissue, muscle to push the poop through the organ and a bunch of membranes to absorb any leftover nutrients. This means that from an evolutionary standpoint it’s a very bad idea to store fat in the guts, as that would make it harder for the body to absorb nutrients.
The reason that the casing shrinks after a burst is because the proces of stuffing it stretches the casing a bit.

*sausage casings are usually made out of pig guts but not always.

Dear Mr.Sausage, I was thinking with the recent revelation of using powdered material, perhaps it would be a good idea to invest in a dehydrator. This would make it possible for wet ingredients that do not have a dry version available to be used in sausage making purposes with less risk of bursting. Though this would add significantly more time for some creations, it may be worth it for certain ingredients.

Checking for holes seems kinda redundant when he pokes holes in the sausage before cooking anyways. A few holes in the casing allow water and steam to escape, which actually helps prevent bursting.
