  • China - the superpower the world fears, but few really know. Ken Hom, the godfather of Chinese cuisine, and Ching-He Huang, leading chef of the contemporary generation, together undertake an epic 3000-mile culinary adventure across China - not only to reveal its food, but its people, history, culture and soul.
They begin in Beijing, the imperial capital for 800 years. It is a city where tradition and innovation sit side by side, and where quintessential Chinese dishes - noodles, dumplings and Peking duck - are being showcased with a new culinary confidence. As well as cooking for world-class chefs in the fiery kitchens of the city's most celebrated restaurants, Ken and Ching visit the homes of ordinary Beijingers to learn traditional cooking methods. And in a break-away from the city, they travel to the forgotten village of Chuandixia, where ancient traditions are being celebrated and preserved.

This’s one of the best introducing/exploring the Chinese cooking/culinary program I’ve seen. Indeed, very interesting.
A great cameraman working beautifully shown in this video.
Ken Hom and Ching-He Huang have done their part perfectly.
Thank you for uploading. I’m appreciated.

Chinese people can cook so many kinds of foods and snacks in different province....From north to south china, from east to west china....each city has different cooking way and food culture.... The foods in china must be colorful, scent, and taste together...with respect of only food, you can know more about culture and tradition....I love china!!!!

To all you people criticising the BBC for letting two western raised chinese introducing chinese food, what the hell is wrong with you people?, I would rather have two people who understand a little bit of chinese culture (who I can understand) to anyone who doesn't or who is completely chinese who speaks little english.

They think what introduced by these two western isn't really delicious Chinese cuisine. And especially the self-conceited lady's cooks worse than a common Chinese people. I thought so too before seeing what you said.
Now I agree with you though I'm still not fond of the lady Huang.

In the Culinary world, when it comes to food art, and the art of cooking, that's how chef's work. It's like trading cooking secrets. They share ideas, which is always welcome. When she was in the Chinese village, it's hard to show a traditional Chinese woman how to cook in her kitchen because you don't want to disrespect her. What makes a good chef is being open to sharing the ideas and not being negative about "oh, look who can cook better" that's not how it is in the culinary world.

While I can understand that as they have been away from this far far home town for such a long time, and their professions are cooking, they perform their cooking to get some communication with the home town so as to make themselves feel that even they've been away for such a long time, there is still something making them connected, which touches me a lot actually.

As a Chinese, I really dont appreciate how these two western guys interpret us in their own way, which they are so confident and think they know us well. They always presents a sense that today's Chinese are overwhelmed by the fast rate development and kind of get lost, and when talking about the history, the stupid, sympathetic look start to show on their faces.

of course you can eat it in a number of ways but then it wouldn't be the original recipe, it would just be either a bare bones fashion of eating it or a fusion with other recipes. there is also the eggroll wrap method but i see it losing out to the sweet white bun. the xo sauce is quite important in both cases
