FYI:Long Paddock Cheese, Longhorn cheese originated in Texas, and is named after the longhorn cattle that were common in the American West. It is believed that the cheese was first made by early settlers who brought with them the skills and knowledge of cheesemaking from Europe.

Dear Gavin! I have a cheese request for you. There is a cheese called mklac-panir (also known as gumry cheese). It is an aged version of armenian cheese called chechil. You can think that chechil is a cheese similar to mozarella, but it is stretched into threads. Mklac-panir is made by aging thick chechil threads inside a clay pot. During aging it develops some blue mold, but it is not entirely covered with it. I would highly appreciate if you'll attempt to make it! I'll try to add a link with photos of the resulting cheese, but youtube may block it :(

I was at a Farmers Market eight days ago and one of the stalls was manned by Long Paddock Cheese. I sampled a few and bought a little bit of Ironbark.
