    I canned some venison once and it came out great. I lost a jar and found it years later. I decided to turn it into a science experiment. That jar has been sitting around and I am waiting to see what is going to happen to it. That jar will be 25 years old next month. I do not plan on eating it of course but it is amazing to me that it still has a vacuum and has not rusted through the lid yet. Yes 25 years come September 15th 2020.

    Tried it with beef and chicken...yielded 7 pints. Tried the chicken and it was amazing. We had delicious chicken noodle soup using this meat and our dehydrated peas and carrots. Amazing.

    How easy! I will be canning some meat. So you can do the beef, chicken and pork all in the same batch at 75 minutes. Good to know! (I'm Ky settings/time too)

    I raw packed chicken, I did not add any water to the jar, but the broth it created does not go all the way to the top of the jar, it doesnt cover all of the chicken. Should I be worried, is that ok?

    Just put up 13 quarts of tomatoes and 28 quarts of pickles and the freezers are still full. Looks like I'll be canning meat now! LOL!!

      Instant Pot to the best of my knowledge, is not for canning. I would not use it as such

    I'm anxious to try this. Have never canned meat before. My neighbor is all the time bringing me Creek trout. I clean and dress it & it has a nice flavor, but is so boney. Can I pressure can this meat ?

      Note in the video that fish takes a it longer, but yes, you can can trout.

      Sure! Go light though, because a little goes a long way when you are pressure canning.

    Are the times 75 minutes for each pint in the pressure canner, or 75 minutes per batch of pint jars in the pressure canner?

      Per batch of pints in the canner. Fish need to cook 100 minutes

    If I thoroughly cook the meat and put it piping hot into sterilized jars. Then submerge the jars in a pot of boiling water for an hour or so to kill all the germs. Would that still be safe?

      No! It definitely would not be safe! Only pressure cooking under exact conditions are safe
