Oh, I have some frozen dumplings in my freezer. Now I know what's for dinner. I love Chinese-style dumplings (combination of pork, mushrooms, and cabbage is my favorite filling), which I prefer steamed or boiled (rather than potsticker-style), with dipping sauce of soy sauce, a little mirin or xiao xing wine, ginger, garlic, scallion, hot red pepper flakes, and toasted sesame oil. Of course Italian ravioli is another type of dumpling. And there is a Ukrainian/Russian dumpling with sour cherry filling, served with sour cream, which is also extremely delicious. That one blew my mind the first time I had it, because I'd only had savory meat or cheese dumplings up until then, and the sweet-ish dumpling was a revelation. You can really stuff anything available into a dumpling. You're only limited by your imagination.
One of my favorite Nepalese dishes. We have the best Momos at Momo Ghar, a restaurant in Columbus, Ohio. Voted top restaurant in the USA a few years back.

Yes, there are different names and shapes for these filled pasta dumplings. Our "Potstickers" would be very similar.
