Pretty sure the lore was just employees having fun that they never thought anyone would notice.

My guess is it didn't start as having lore or anything, but after seeing the theory's they just thought it'd be fun to actually form it into lore and its probably also a pretty big cash grab since people are going to be more interested in Grubhub because of the lore and theory's.
