This Chocolate Showpiece took me 5 days, weighs 65lbs and is 5ft long.

Dude every time I watch a video that's new to me, I'm blown away by this man's skill. This isn't just art, it's engineering. It's a LOT of thought going into it. I'd LOVE to see his thought process, his drawings and such, if he even does them and doesn't just whim his way through projects like it seems in his videos. This guy's got more talent than 99% of humanity combined.
Totally - this is engineering. Involves lots of knowledge which is probably similar to architects and automobile engineers. Look at how those pieces close as a seamless BMW. Man.

I hope one day we can also get to see his planning process, how he comes up with ideas, conceptualizes them, and then plans out their build. Like seriously, those balloons for the sleigh seat? Brilliant.
I wish the same to hear how he decides on the technique to make his vision come alive. Yes, the balloon to create the seat was mind blowing.

Chef Amaury, I watched your show on netflix. I loved it, how respectful, elegant and polite professor, you showed the world that to be truly good at your craft one doesnt need to resort in bestial behaviour or putting others down. How many adjectives can one person use to describe your beautiful work! It's mind-blowing that you come up with the Subject material, but then to be able to create it with sugar and chocolate, I'm speechless, and this is almost impossible to do! 😍
