    On the season finale of the sandwich series I’m headed out on a journey to explore a sandwich that has recently been gaining popularity in Japan decades after it original creation in a 1990’s Japanese comic book. I’ll head out to 969 NYC Coffee in Jackson Heights to talk to a Japanese Chef who has been mastering the craft of the Onigirazu. Back in the kitchen studio, I’ve teamed up with GT’s to give you a quick beginners guide to drinking kombucha as well as show you how to make some Japanese style pickles by taking advantage of the acidic qualities and health benefits of kombucha. Then I’ll show you a great way to create vegan style “crispy nuggets” to create the perfect filling for my homemade Onigirazu. @GTskombucha

    This sandwich really is so ingenious. You are basically putting almost a whole bento in a sandwich. I love all the fresh elements with a little protein.

    The ring mold is a great idea... I've been making them by just stacking the ingredients which can get kind of cumbersome and messy. A good tip I've found is to lay a stick of cucumber or carrot (or anything really) on the outside after it's packaged in the direction of the sliced vegetables on the inside so that when you cut it, you can cut against them to get that really nice cross section

    I recently discovered onigirazu and it has been an amazing replacement for my children's lunch at school. They are more open-minded about variety even if in reality is still just a sandwich but it's with rice and seaweed.

    I'm vegan but I love watching your videos, especially the sandwich series, because I can always learn something new. I used that simmering broth with the 20 chinese spices to cook some home made seitan in and it turned out soooo delicious!

    Hello! Thanks so much for this series! I'm a chef and I'm also vegan but I've really appreciated seeing all the different techniques and history behind all these sandwiches, and although I don't eat meat, it's still so helpful to learn about all these different ways of cooking and apply them to other things I'm making, especially if I'm trying to replicate a meat flavour or texture. I've loved the effort you put into these videos and how they've evolved over time, it really shows your passion for food and cooking and your serious next-levels of cooking intuition and skill. It was awesome for me to see the series end on a vegan sandwich because it really reflects the increasing popularity of veganism and shows you're in touch with your viewers. Can't wait to see what you do next!
    Also, having read some of the comments, you using the Premiere feature didn't bother me in slightest, in fact, it did get me excited that this video was coming out soon since I've loved this series. I didn't watch the video 'live' since it was at 2am UK time, but it was literally no inconvenience to me.

    I have been binge watching Korean/Japanese/Vietnamese cooking videos for the past 6months I've watched every type of video you can imagine and I still to this day need more information and am just obsessed !! One too I saw this older woman doing is putting her pickled veggies in glass air tight mason jars and seeing them upside-down in the fridge or in a dark room.. I tried the fridge method and I can't lie I love it I live for anything pickled !

    I love that you research the culture well! There is actually a traditional freez-dried tofu called Koya-dofu or Kori-dofu in Japan. I love them. Thanks for showing our food :)

    Hey Man ! I tried cooking this at Home and it was really Amazing. I had another ingrediens but i stayed on a vegan onigirazu. I also cooked tofu nuggets but not the same way and i wanted to share it because it was really Delicious !
    So I had in mind those Japaneses marinate chicken nuggets that calls kara-age and I wanted to do the same with tofu. So broke my tofu in nuggets and put them in a bowl. Added some soy sauce, rice vinegar, some mirin , sesame oil, garlic and ginger. Let marinated that during few hours. Then I took the tofu out ouf the marinade added flour to the marinade . Pour the paste on the tofu pieces, add some extra flour and fried it !
    You all really need to try this it was absolutely delicious !

    This looks so good and relatively simple. I have quite a few vegan friends and I feel like I've maxed out all my vegan recipes with them. I'll definitely be giving this a shot the next time they're over.

      the better way to make the freezing tofu work even better is to open it, drain, freeze, unfreeze, drain (you can repeat that once again), pull into chunks AND THEN marinate it in veggie broth! He didn't do that but it makes the tofu soo much better. Then you can bread and fry :)

    I just started watching your channel and at first I had some reservations but after watching your bone broth video and now this I'm starting to really enjoy watching this wonderful channel. Four years ago I lost my sense of taste so I've been feeding my eyes through cooking channels like Marco Pierre White, Gordon Ramsey, Cooking With Dog, Career: Housewife, that one French chef channel that makes lovely ramen, and now yours along with many others I can't think of. You have a very complicated skill that you make us, the layman (or experienced chef), understand easily and the way you edit your videos makes everything come together like warm running water on a cold winter day. Thanks for allow me to live vicariously through your entertaining videos!

    Shiso leaves instead of lettuce/or siding with the lettuce would've added an amazing flavor!
    Please try it yourself with shiso leaves, or try ume onigiri with shiso leaves, truly a heavenly experience for the palate :)

    a quick tip for your rice if i may suggest ;)
    i know it's not a traditional way of doing it, but you can use a fork to "gently" mix the rice after you put the marinade on it.
    this way you don't put to much pressure on the rice and it doesn't get mushy.

    My old sushi shop sushi queen made a wicked sushi sandwich with sweet pumpkin watercress and katsu chicken in Panmure Auckland NZ. its beautiful

      Wow now thats kiwi all you need is the doughboys learnt alot of maori/polynesian food in nz

    OMG MY TWO FAVS! - Mary's Test Kitchen and Brothers Green! I'm so glad you chose that fried "chicken" recipe from her. It's fantastic but I so wish you had continued her recipe by having the tofu chunks soak in some broth to give it more flavor.
