- How do you make authentic Cheung Fun at home? Achieving the perfect texture could be tricky for a lot of people. Don’t worry! I’ve got you covered! I’ll share with you all my secrets!

Prep time: 30 minutes
Cook time: 30 minutes
For the filling:
1 tablespoon oil
6 tablespoons dried shrimp, presoaked for 1 hour
3 stalks scallions, minced
For the cheung fun batter:
4 tablespoons (40 g) wheat starch
4 tablespoons (31 g) tapioca starch
1 cup (135 g) rice flour
3 cups (710 ml) water
1 teaspoon oil, for the batter
2 tablespoons oil, separated, for brushing
For the sauce:
4 tablespoons hot water
2 tablespoons sugar
2 tablespoons soy sauce
1 tablespoon dark soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil

Finally a proper Cheung-Fun recipe for some home made Ha-Cheung. All of the other recipes are just a sticky mess when you try to unroll it from the pan you can tell how easily it unfurled from the edges when she used the dough scraper that it's the right consistency. I wonder if you can use these noodles to make beef chow fun.
Thank you for your feedback! I'm pleased that you enjoyed the recipe. For hor fun noodles, we typically don't include wheat starch, and the ratio of ingredients is a bit different. You could try the following combination:
- 1 1/2 cups rice flour
- 2 tablespoons tapioca starch
- Pinch of salt
- 1 1/2 cups water

Will it change the final texture if cornstarch is used in place of wheat starch? Thank you.
Yes, the texture will be slightly different, and it wouldn’t have the translucent look, but you could replace the wheat starch with cornstarch. I hope it works out! 😊
These look really good! I do have a question though. When we order these for dim sum they are always hot. If I use your recipe to make 6 rolls with shruimp and bbq pork, how do you keep them hot so they can all be served at the same ? Thank you for the recipe!
Thank you for watching the video! You can try this: In a large steamer, bring water to a boil. Turn off the heat, place all the finished cheung fun in the steamer, and cover with the lid. I hope this helps! 😊
