    About Sweet Briar Farm
    We are a small farm located in Central/Northern Michigan. We farm every inch of our 6 acres. We breed Registered Dairy Goats, Dexter Cattle, and Heritage Hogs. Clean healthy food is important to us and we like to produce the majority of our food on the farm and we grow and raise enough to sell to local customers. Producing our own food also means we forage for wild edibles such as mushrooms and tap our maple trees in the spring to make maple syrup. In 2019 we added honeybees to the farm and have had as many as 30 active hives producing honey for us.
    Our goats include Nubian goats, Mini Nubians, Fainting Goats, and Nigerian Dwarf goats.
    Our Heritage Hogs include: registered Berkshires, Tamworth, Kune Kune, and Hereford.

      I think Kelsey ordered it on Amazon. Eivin likes to watch the Deer meat for Dinner channel. He watched a video of him cooking fish by poaching it, I want to say it was halibut. Eivin thought he would try it for blue gill... Lets just say Blue gill doesn't poach well... lol We warned him but he watched a TH-cam video!

    WOW WOW WOW Those steaks look AMAZING and im sure the taste was Fabulous too!!!! Congrats on a fine meal from your own farm, all of us on the other side of the screen are drooling.... Just a thought, do you think if you aged the steer an extra year, would you get the added flavors like a bull or is it due to the existing plumbing for hormones or something that changes the flavors? Just thinking of a way to get a rotation of best of the best flavors. I dunno LOL

      I think the older the animal you would definitely get more flavor. There is a channel we watch they compared steaks from older animals I believe up to 8 years old and they noted a remarkable difference in flavor. I will look for the link and post it on the community tab.

      I don’t know if it’s something about dexter bulls but we had him separated from the cows for about 3 months so he didn’t have all the hormones cause any off flavors. I have read people who butcher bulls from other breeds usually just burger them because the cuts can be really tough.
      It’s probably similar to deer. I have shot bucks when they were in rut and they are stinky and the meat is more gamey compared to a buck that isn’t in rut.

      @@lizziecapeder8322 I can’t really comment on angus bulls. From what I have read in the past most beef breed bulls are turned into burger. I personally would try the chuck roasts, rib steaks, and tenderloin and probably burger the rest. How big is he?

    A Chef friend & I are about to do a cook off with Rib Steaks Bone in- we are testing the Flavors of Grass Fed against Grain fed beef. What are your thoughts please. Cheers Denise- Australia

      It’s always fun doing comparisons. This video we compared grass fed dexter bull vs grain and grass hereford. It would be interesting to see if there is a difference between grass finished and grain finished of the same breed of cow. My guess is the fat would have different flavor and or texture.       @@shyland4534 Sorry to disappoint you but we sure do use Salt & Pepper & because we use the Reverse Sear Method they were absolutely beautiful & I couldn't choose except Grass Fed was more buttery.

      no. 5 year old bull 2 year old steer. We have a one nutter currently, that wasn’t banded correctly by the breeder. I am not anticipating much difference between him and the steers when we butcher next fall. But we shall see.

    What if you butchered the bull at the same age of the steer?

      That’s a great question! We have not tried it but I know that it has been done. My expectation is that the steer would have slightly better marbling than a young bull. If would try to time butchering a bull for a few months after he’s finished breeding for the year to give him a chance to recover from working.

      @@bobach6083 we separated him from the cows for a couple months. He was all grass fed. I have heard of people castrating bulls and fattening them up too. This bull had decent fat on him but still lean compared to the steer. Other breeds the bull meat might be different than dexters (tougher).

      The burger is great the few roasts we had cut were great. The only thing I would do different is throw the brisket into the grind. That wasn’t very fatty and turned out dry.

      @SweetBriarFarmMichigan lol sorry. I live the video. And both the steer and bull meat looked amazing. The bell meat was more lean, but the texture looked good. It didn't have that grainy texture like you see with most grass fed or lean beef. The steer meat had beautiful marbling. That's what caused me to wonder how human men getting the snip might have other effects. Possible weight gain or hormone imbalance. Like one of y'all mentioned, the bull meat had a "stronger beefy flavor"... well, yeah, it's body it producing all the hormones it normally would, without the snip.
      Terribly sorry. I was tired, in not in the best headspace. That beautiful marbling made me think of something completely off topic.

    marbling is not a health sigh for animal muscle,waygu is trash that overrated
