Is there a substitute for the couverture chocolate? I know that it has a higher cocoa percentage and is higher quality, but where I live it is unavailable and extremely expensive. Would normal baking chocolate work? Or bars? Melting wafers?

I'd probably just go for a really dark chocolate. But don't go over 70% tho cus it tends to not work well. Any brand will do
