आज पता चला कि भटूरा एक पंजाबी पकवान है.
तभी तो छोले भटूरे दिल्ली के बाज़ारों में मिलने वाले सबसे पसंदीदा स्नैक्स में से एक है.
दिल्ली विभाजन के समय बेघर हुए पंजाबी परिवारों से भरी पड़ी है. इस शहर में छोले भटूरे बनाने, खाने और पसंद करने वाले अधिकतर यही पंजाबी हैं.
इन परिवारों के माँ बाप पंजाब और NWFP के उन्हीं इलाक़ों से दिल्ली में आकर बसे थे जो 1947 में पाकिस्तान के हिस्से बना दिए गए.
दिलचस्प बात यह है कि दिल्ली के वो मुसलमान जो विभाजन से समय पाकिस्तान जाकर बस गए और मुहाजिर कहलाए भटूरे से आज तक अपरिचित हैं. मतलब ये कि भटूरा पश्चिम पंजाब के शरणार्थियों के साथ दिल्ली आया होगा और आज दिल्ली के बाज़ारों पर राज कर रहा है.

تبھی تو چھولے بھٹورے دہلی کے بازاروں میں ملنے والے سبسے پسندیدہ سنیکس میں سے ایک ہے
دہلی تقسیم کے وقت اجڑے پنجابی خاندانوں سے بھری پڑی ہے
اس شہر میں چھولے بھٹورے بنانے کھانے اور پسند کرنے والوں میں زیادہ تر یہی پنجابی ہیں
ان خاندانوں کے بڑے بزرگ پنجاب اور سرحدی صوبے کے انھیں علاقوں سے دہلی میں آکر بسے تھے جو ١٩٤٧میں پاکستان کے حصّے بنا دِیے گئے
دلچسپ بات یہ ہے ک دہلی کے وہ مسلمان دو تقسیم کے وقت پاکستان جاکر بس گئے اور مہاجرکہلااۓ بھٹورے سے آج تک نابلد ہیں
مطلب یہ ک بھٹورا مغربی پنجاب کے ریفیوجیوں کے ساتھ دہلی آیا ہوگا اور آج دہلی کے بازاروں اور ٹھیلوں کی شان ہے
