Idli is a traditional South Indian breakfast dish that is enjoyed all over the country and even abroad. The key to making soft, fluffy idlis is to have a well-fermented batter. Here is a recipe for soft idli batter: Ingredients: 3 cups of idli rice (parboiled rice) 1 cup of urad dal (split black gram) 1 teaspoon of fenugreek seeds Water, as needed Salt, to taste Instructions: Wash the idli rice and urad dal separately and soak them in water for at least 4-6 hours. In a separate bowl, soak the fenugreek seeds along with the urad dal. After soaking, drain the water from the rice and grind it in a wet grinder or food processor until it becomes a smooth batter. Add water as needed to make a smooth consistency. Repeat the same process for the urad dal and fenugreek seeds. Grind it until it becomes a smooth and fluffy batter. Now, mix the rice batter and urad dal batter together in a large bowl. Add salt to taste and mix well. Cover the bowl and let the batter ferment in a warm place for at least 8-10 hours or overnight. The batter will rise and become airy and light. Once the batter has fermented, give it a gentle stir and it is now ready to make idlis. To make idlis: Grease the idli plates with oil or cooking spray. Pour a ladleful of batter into each idli mould and steam for 10-12 minutes or until a toothpick inserted in the center comes out clean. Remove the idlis from the moulds using a spoon or knife and serve hot with chutney and sambar. Soft idli batter requires some patience and planning, but the end result is definitely worth it.
