      It really is delicious. Now if you obviously wanted to make other combinations like double chocolate chip muffins you would simply just need to add chocolate chips and some chocolate cocoa powder to taste. With regards to the coffee and walnut muffins, just boil water and then put instant coffee granules mix it up and then measure it out according to the recipe and leave it to cool down before mixing it into the ingredients if that makes sense and then instead of the blueberries just add the walnuts, into it breaking them up. You can definitely mix and match, but the bulk of the recipe is the same. Xx

    If anyone is looking for the carrot cake muffin recipe, please find it below:
    Here's a really simple carrot cake muffin recipe using metric measurements:
    Ingredients:
    - 250g carrots, peeled and grated
    - 250g self-raising flour
    - 175g soft light brown sugar
    - 1 tsp ground cinnamon
    - 1/2 tsp mixed spice
    - 2 large eggs, beaten
    - 75ml vegetable oil and 75ml water.
    Instructions:
    1. Preheat the oven to 180°C/350°F. Line a muffin tin with paper cases.
    2. In a large bowl, combine the flour, sugar, cinnamon, and mixed spice.
    3. Add the beaten eggs, water and vegetable oil to the bowl and mix until just combined.
    4. Stir in the grated carrots until evenly distributed throughout the batter.
    5. Divide the mixture among the muffin cases, filling each one about three-quarters full.
    6. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
    7. Allow the muffins to cool for a few minutes in the tin, then transfer them to a wire rack to cool completely.
