⬇️ Ingredients ⬇️
1.5kg Whole chicken
4 stalk Scallions (white part only)
3 slices Ginger
2 Potatoes (cut into bite sized pieces)
3.4 litres Water OR just enough water to cover your chicken
300ml Coconut milk
½ Lemon juice
1 sprig Curry leaves
450g Yellow noodles
100g Bean sprouts
55g Tau pok (cut into halves)
100g Fish cakes (cut into strips)
Spice blend:
500g Red Onions
200g Garlic
5 pcs Candlenuts
3 stalks Lemongrass (stem only)
3½ tbsp Curry powder
5 tbsps Chilli paste (add more to your preference)
1 inch knob Turmeric
1½ inch Galangal
10g Belachan
10g Torch ginger bud
Salt to taste

Put also dried prawns into blended ingredients....instead of lemon....put tamarind paste is more authentic and also some palm sugar will definitely taste better. Instead of store bought chilli paste....use a combination of fresh and dried chillies....blend them together with all the blended ingredients. But this is YOUR PERSONAL recipes of course. Just watched this. Will try your recipes with lemon and SingLong chilli paste without palm sugar later and see the difference myself. Thanks for this different take on curry chicken noodles recipe.

Hi Rachel! The chilli paste is store bought. Sing Long Chilli Paste is one option but you can use other alternatives, whichever is available in your area. Hope that helps! :)
I am from Singapore. The problem with curry powder here is that there is always this stinky stench. Any ways to solve this problem? I have tried vinegar, sugar etc. Can't seem to achieve the balance that is such at legend at beach road scissors cut curry rice....
To be honest, the best ever curry noodles soup I've had is in KL at Alok st. Popup store, yellow signboard really THE best. You can empty the bowl without ever feeling thirsty. Heck, even if the weather is hot, you'll still wanna have it. It's precisely because of how damn good it is! A sumptuous bowl will set you back for less than 15RM!
I live in Australia my mom is from Singapore my father celebrity chef actually owned Michaelangelos in Holland village in Singapore. The only curry powder we use here is babas curry powder it's from Malaysia but easy to get here I Australia at any Asian grocer
