I tried this recipe. I only used 1 1/2 cups chocolate chip and I replaced the remaning chocolate with hazelnut. So I add 1 1/2 cups hazelnut. That was just so amazing, delicious. Thanks for the amazing recipe.
Thanks for a clear, simple recipe. This recipe is similar to the one I used for when my boys were growing up, except for the white sugar. I always made large cookies for them, also. With the small cookies, it seemed they never got enough. But when I made them large, just one kept them happy. Go, figure.

I made the dough the night before for my sister who was visiting the next day, and they came out great. Refrigerating the dough truly makes a HUGE difference.
@@hindahmed6434 i didn’t shape the dough, but it will be very difficult to shape if you dont prior to baking. I left my dough in the fridge up to a week with no issues. However, I’m not too sure about leaving the dough in the fridge for one month, it sounds like a freezer job.

I made these with a hand mixer. AMAZING!!! I did 2 milk choc and 2 semi sweet. I also added pecans. I made mine 4oz. They were still huge. Gonna make 2 or 3oz next time. Otherwise??? Perfect!!!

Hi Rachel I just made the recipe with my little one & we made some replacements as we didn't have any cake flour or brown sugar around. So we replaced a quarter cup of the flour with corn starch and a quarter cup of the sugar with sugar cane molasses. It taste super yummy 😋😋
Holy Moly... I could not for the life of me get these right. Adding the baking powder and freezing them totally does the trick. I modified my own receipt to incorporate those and they are perfect (and a huge hit). I’m guessing it will work with any. Thanks!

You have to change the title. It is the most amazing choc chips cookie. I used light brown sugar and made it into 3.5 oz omg... 4 cups choco chips is worth it.
Are these the famous Levain Bakery style chocolate chip cookies? I don't know which blog it was, but there was a mention of those cookies being 6 oz each and the recipe also used cake flour. But it also used cold butter and I was very surprised, it's not a scone, it's a cookie. I can't wait to make these. I get excited when I see your videos, you make everything look very easy.

Recipes are traditionally written for standard ovens. Using the convection mode should only be done when the recipe specifically calls for it, or after having figured out your own conversions for convection cooking.

Kalifa Brown, look up oatmeal cookie recipes. It will be easier to make them than trying to redo a chocolate chip cookie recipe. Oatmeal cookies have cinnamon and raisins and other spices. I have a oatmeal cookie recipe that has butterscotch chips and cinnamon that are very yummy. :)

This recipe worked out really well. I used 3 oz and 13 minutes, but they didn't seem overbaked. And now I would like to know how to adapt this recipe to the dark-chocolate-batter + peanut butter chips version, which I think is also made by Levain. Does anybody know that?

I'm not sure about the European butter. The brand of cake flour used won't really affect the recipe, I use swans cake flour all the time. Maybe u didn't use room temperature ingredients or mismeasured your flour? If you use a scale it should be in grams for more accurate results. Btw 1 and 3/4 of flour is 210 grams. 1 cup of cake flour is 120g
You can make your own if you have all purpose flour and corn starch. Measure 1c all purpose flour, remove 2 tbsp from it. Now add 2 tbsp of cornstarch. Sift together to combine and that’s it! You’ve got cake flour.

Yum! I want to make cranberry/walnut/white chocolate cookies. Will it work if I use 1-1/2 cups dried cranberries, 1-1/2 cups white chocolate chips and 1 cup walnuts? REALLY want to try that combo!
Well, this recipe isn’t for a chocolate cookie so you’d have to make extreme alterations to the recipe to the point that it’s not even recognizable. Unless you feel comfortable in your skills as a recipe developer, I wouldn’t recommend it.

Hi Chef,.....i LOVE this video,... i have one question that i never see on other videos ,....Do your cookies stay soft after cooling for hours,...because many cookies look great right out of the oven when they are warm and soft,...and i have had this issue when baking some myself, that they would harden after sitting in a covered bowl or what ever they're being kept in,.....thanks in advance for your reply :)
Yes, mine stay soft. The cookies you see in the photos and in the hero shots in the video had been sitting out for hours before being videod and photographed simply due to the nature of how we produce videos. They stay soft for days.
princess pinkito you can make your cake flour. Remove a table spoon of flour per cup of flour and replace it with corn flour. For bigger quantity,for 1000g of cake flour, measure 900g of all purpose flour and 100g of corn flour.

It is a good subsitute, but not the same thing as actual Cake Flour.

What kind of baking sheet did you use? Was it a dark color metal pan?
@@Thestayathomechef I used a really large gold pan called Nordic ware. I put parchment paper as well. Maybe the rack was too close to the bottom?

I don't think so. Cake flour has a lighter airier result, so it might be a bit dense. But I'm only 13, so it might be wrong.
