I'm not one of those guys who think 125 is the best division with automatically the most technical fighters. But I am a pretty big stand for the top 5 or so. Basically every fight between Pantoja, Moreno, Royval, Farnce, Erceg, Figgy, etc. have been bangers. When the guys near the top square off, it may be more reliable than any other division to deliver a genuinely entertaining fight.
I'll echo the praise of Pantoja for being simply an incredibly tough and determined competitor. The longer I watch the sport, the more I appreciate those kinds of fighters. They fit Chael Sonnen's definition of a true "tough guy," which is someone who's always pushing, no matter the situation. If they're down by 100 points, they're fighting to be down by 99. If they're up by 100 points, they're fighting to be up by 101. Fighters like Edgar, Cruz, Usman, Dilashaw, Volkanovski, and Jones (have to give him credit there) all fit that bill, and I'd say Pantoja more than deserve a place amongst them.

How is that Kron/Bryce fight on the main card but Evloev and Aljo are on prelims? That is the more significant and important and a better fight, and they are in the same division. How did Kron get booked again after his last fight. Bizarre. Almost as bizzare as those two dudes.
In regards to people not liking Sterling, a lot of it comes from his oscar winning performance after being kneed in the head by Yan the first time. I forget about that moment as well, because I really didn't think it was a big deal or that he was faking.
To be fair, Conor at least does it with some other languages too. Luke ONLY cares about pronouncing it correctly if its Spanish (or "Adesooiinya") and just likes to hit Brian Campbell with the "hey I'm still smarter than you" stick.

Neil didn't drop him but he did wobble him pretty good. But overall Shavkhat actually landed the better strikes. Hurt Neal with that piston right hand, a spinning, and something else im forgetting. He gets hit but his defense isn't bad. He's just super aggressive and moves forward so it's inevitable he'll get hit sometimes.
All true, shav does love to wade in throwing knees to the body with no form of guard in place, uppercuts (as you said) and other strikes you should not be leading with.
Two undecided opinions. Is Pantoja exciting? I've heard ppl yell HE IS EXCITING STOP COMPLAINING. If you have to convince ppl he's exciting there's something wrong. #2 Garry's striking, I've heard opinions from it's bad to it's great
pantoja isn't really a highlight factory. iirc he's fundamentally sound on the feet and well rounded enough that you don't want to test the ground with him, but the biggest traits in his fights are usually his durability and willpower.
Why are you so convinced that the UFC and Dana hate Aljo because he's black? I think it's clear the UFC hate him because he's the first ever champ to win by DQ. For some reason they blame him for that more than Yan. Kinda reaching with that one IMO.
