    Basil and garlic Pucks. Grind both up, put in ice cube trays or scoop out with small spoon and place on cookie sheets. Freeze and once completely frozen, remove from cookie sheets and place in ziplock bags and toss back in freezer. When cooking, removed a puck and start cooking. It’s wonderful to combine different herbs and freeze as pucks. Becky from Acre Homestead does this and I love the idea. I’m getting inundated with herbs and I’m having fun combining all the different herbs for cooking

      If you make your own stuffing/dressing from scratch during the holidays, your dehydrator will be your new favorite holiday helper and sous chef. No more laying the bread or old buns out on the table to dry it out. I don't know why that didn't occur to me until I saw Darcy putting the hot dog buns in the dehydrator 🤔 - 🤔 probably because I've only been using my dehydrator for a few months.

    I saw the Cosori dehydrator in your tagged products. The $159 price point is a good one! I just saw the Cosori on Amazon the other day for $279. I bought mine last summer from Amazon when they had a deal, and it was between $129 and $159 about a year ago. I feel like it was less than the $159 then, but it's a good price at $159 especially if Amazon keeps it at over $200!

    Hey Darcy! I'm trying to dehydrate tempeh (a fermented soybean product) which is high in protein/fiber but low in fat/cholesterol. I find that cooking the tempeh in a pan or in air fryer is delicious however after my first few attempts at dehydrating (doing around 6 hours at 125F), I find that there is an unpleasant, hard to describe flavor. I've tried a couple of different marinades before dehydration (soy sauce, Italian herb), but still seem to get an odd tail-end of flavor. I've also come to realize that I really should add any oil in the marinade which may further complicate the process of making a well preserved, delicious snack

    • @ThePurposefulPantry
      @ThePurposefulPantry  9 หลายเดือนก่อน

      As a snack, it won't matter. It'll be fine if it tastes better to you - it just won't be reliably shelf-stable. I've never done it, so I don't have personal experience with it.

    Question about the cucumbers... what would you use them for other than taziki or jelly?? I love gazpacho, Chef John's recipe especially.... would you dehydrate those ingredients separately or make it then dehydrate and probably powder it??

    • @ThePurposefulPantry
      @ThePurposefulPantry  ปีที่แล้ว

      You can often replace zucchini with cucumber in some recipes (you'd want to test if the flavor doesn't turn you off). You can dry it as a soup if you leave the oil out (makes it less reliably shelf-stable - you can saute without it), or you can do individual ingredients if you want.

    I am learning so much from you. Thank you for all that you do!
    I have a burning question about dehydrating garlic.
    I have a load of the garlic slices in my dehydrator (for several days and nights now) and although they snap when I go to see if they are dry, they are sticky/tacky to the touch when cool.
    So I keep putting them back in the dehydrator and keep running it.
    Am I doing this right? Is this normal? Will the stickiness eventually go away?
    I am using fresh garlic recently harvested from the garden and dehydrating it in slices instead of minced.
    Thank you!

    • @ThePurposefulPantry
      @ThePurposefulPantry  ปีที่แล้ว

      How long are you letting them cool before testing? Or are they still warm? How thick are they? They have a natural sugar/oil that will stay tacky when they are warm ---- or if left too long, they are absorbing moisture. If they are dry - they are fine, and a little tackiness is fine. That's why you condition to test before you store. If it's been several days and they are thin slices, they should be done.

    • @sixfigurebookkeeper7588
      @sixfigurebookkeeper7588 ปีที่แล้ว

      Thank you for the reply!
      Letting them cool for an hour
      they are about 1/4” thick
      the stickiness/tackiness seems to be from oil, not water. I’m guessing this is because the garlic basically came out of the ground and got processed onto my dehydrator trays (before the bulbs had a chance to cure in the sun).
      the slices themselves snap easily, but there is a thin film of sticky oil on most of them
      I’m guessing my mistake and the reason that it’s taking an eternity to dry them is that the garlic is ultra fresh? And next time I would be better off to make sure I am using cured garlic instead of right out of the ground garlic?

    I recently dehydrated about a 1/4 cup of Better Than Bouillon paste. It dried really well and I powered it up. My question is, is it safe to do that? Can I store it on the shelf or should I keep it in the fridge or freezer? I rehydrated a small amount to test it and it was great. I like it because it is organic and lower in sodium. I’m just nervous to use it in case it it not safe.

    • @ThePurposefulPantry
      @ThePurposefulPantry  ปีที่แล้ว

      It's not that it isn't safe. It's the fat. You can store it on the shelf, but it's not reliably shelf-stable. So you may get months of it not turning rancid, or you may get a few weeks. So go ahead and do it, just know that it's not as reliable as things without fat, and that the freezer/fridge is the best optimal storage.
