How to make Jerk - Jamaica Style

  • Jerk is a method of seasoning and grilling meat that has its origins with the Tainos and later the Jamaican Maroons. The Jerk method of cooking was primarily used in the cooking of pork, helping to preserve the meat for days while people travelled through the countryside. Jerk was applied to wild hogs found in the Blue Mountain region of Portland. The meat was cleaned and dressed with spices and seasonings found around the area, then wrapped in pimento leaves for flavour. The pig would be lowered into a pit with hot coals with additional coals added on top. The pit was covered for 6 8 hours to allow the heat to cook through the meat.

    Lovely - I'm fine with jerk chicken but love seafood. As posted here, I think chef might have forgotten to add lime juice.

      I dont use cinnamon, black pepper or nutmeg in mine and I add lime juice as well as worcestershire and soy sauces. I only jerk chicken though.

      Likely vinegar or lime juice. The oil was added at the start.

    This is not jerk seasoning - it is missing soy sauce, miso paste, Worcestershire sauce / fish sauce, nutmeg, vinegar, lime juice, etc. this is wrong as can be.

      +Jules L Your an idiot, Jerk was a way of preserving food, the Spanish changed it a little, and soy sauce, miso paste, Worcestershire sauce isn't native to Jamaica, those are North American additives and Asian influenced additions.
