    A dash of sole fish powder ( 2 tsp) plus the prawn n sotong blanched water enhanced the broth. Usually add 1/3 of medium beehoon ratio to the yellow noodles makes it more authentic. The finale essence of the dish is to add the fried pork lards.

    Every thing about Hokkien mee is fine with me except some hawkers using plastic plate as co-spatula.

    Your recipe seems easy enough and looks very yummy. I don't like the kee taste and that oil the mee is coated in so I always rinse my noodles in hot water too. Love your videos for home cooking. Surprised the Tefal saucepan's handle wasn't hot to touch.

    Great stuff Leslie! Really missing my Singapore food now we can't go to Singapore! We will get fat and happy testing SG recipes here in BKK. My husband Leslie will be VERY happy... and maybe fat...

      @@ieatishootipost Hi Dr Leslie, it's been a while since then! My hubby fell sick in Oct last year which made him lose some weight, then this year he picked up golf again and today he is 10kg lighter! :))

      @@ieatishootipost Hi Doc, this is your namesake replying on Lin's computer. There was a period of time about two years ago that I went up to 74kg, Then I had a bout of flu last year in Oct and lost about 2 Kg but felt so much better I decided to continue with exercise and dieting and then in Feb this year I picked up my golf again and now am back to 63 -64 kg which I think is quite a fair weight for my height. We are well here under the current lockdown although all golf courses are closed for now. Hope we can welcome you back when all of this is finally over. Blessings Leslie

    Haha, try not to use s/s spatula against any ceramic or pot coated , there is a chemical reaction thus it may cause damage to the pot.
