Sorrel Soup

  • It's a somewhat eclectic episode today as I make French Sorrel Soup using leaves freshly foraged on a dog walk. I also find parasol mushrooms, rosehips, mistletoe and robin's pincushions (but don't put them in the soup).
    Here's the recipe ...
    • 30g of butter (I used oil and butter)
    • 1 onion
    • 2 garlic cloves, sliced (I used wild garlic and three-cornered leek)
    • 1 tsp fennel seeds
    • 1 large Potato, diced
    • 700ml of chicken or vegetable stock
    • 1 bay leaf (I forgot this)
    • 50g of spinach, roughly chopped
    • 50g of sorrel, roughly chopped
    • 1 handful of parsley leaves, chopped
    • 1 handful of dill, chopped (I used dried)
    • 1/2 lemon (Damn! I said it could do with some lemon!)
    • 1 egg, boiled for 8 minutes, cooled and chopped (Nope)
    • 2 tbsp of sour cream, to garnish (Didn't have any)
    • salt
    • pepper
    It was nice anyway.
