Gooseberry Bridge Farm is located in the Ozark Mountains of Southwest Missouri. We moved from the typical “house at the end of a cul-de-sac in a subdivision” in 2016 to our little 11.6 acre farm and haven’t looked back!
We are a multi-generation homestead raising our 6 children, and strive to provide our kids with rich experiences and a strong work ethic that will benefit them through their lives.
In addition to producing and preserving as much of our own foods as possible, we also operate a you-pick flower farm with different varieties of flowers throughout the year. Our goal is to be as self sufficient as possible, within the boundaries of what is realistic in today’s world.
Our intention is to post 2 new videos a week, but first and foremost we are operating an actual operating homestead with goats, sheep, chickens, ducks, rabbits, pigs, quail, fruits, vegetables, flowers, and more. Our intention is to make our videos relevant, meaningful, and to depict an accurate portrayal of our homestead journey - and hopefully educate folks a little bit along the way.

Freeze dried is great, you can keep that for long term 20 to 25 years.. long term pantry..
I have the same, 3 pantries.. 1 is working pantry, 2 is rotating pantry, ( FIFO) First in first out.. I date everything.. and 3rd is the long term pantry...❤️👍😀🇺🇸 AWSOME you guys... For Jars have really good canning lids.. it's a family company..
I love the Trombocino squash! The lack of seeds gives it a great texture in the neck. Thanks for this video. It also reminded me how much I want to grow them again! Freeze drying is all about experimenting!! We’ve not really had anything that totally didn’t work - with the exception of some candies and sweet hot sauce - things with too much sugar and or egg whites can really expand and make a mess! 🥴
Thanks guys! I’ve been looking at ways of becoming more self sustaining, and grew up canning with mom, didn’t want to go through all of that all the time, not vacuum sealing it and putting it in the freezer. Y’all have cleared up some questions and I see my own freeze dryer in my future! Thank you!

After just two months my carrots and sweet potatoes had bleached! Yours are so orange still!
We had some bleach (started on the front of the shelf where there was the most light) and added cardboard around these on the shelf to keep the light out - it worked! We now pack them in Mylar to keep them from bleaching
How did you prepare the carrots and sweet potatoes before freeze drying
No additional prep, they were raw- just cut up and freeze dry
Do any of the veges crisp up, as in the green beans? I’m eager to see more of your videos. We are all learning! Thank you.
They do brown and will get a nice crust when they are fried. They dont 'crisp' like a fresh vegetable, but when they are cooked the do firm up nicely.

Great tip about putting in a jar with boiling water and turning it over! I've been trying to learn how to rehydrate well. Do you blanch your vegetables before freeze drying?
The only thing we blanch before freeze drying is regular potatoes (not sweet potatoes) - makes it so much easier!

You pour the water in with the O2 absorbers still in the jars?
We generally try to pull the O2 absorbers out before we rehydrate.

Another question, my freeze dried carrots and sweet potatoes turned whiteish after freeze drying, and tasted chalky. I blanched them first and wondering if that's why since you didn't blanch yours first which look orange.
We’re they exposed to light? After being exposed to light for a month or so they will turn white, we now store them in Mylar or if in jars we out the jars in a box. If they aren’t rehydrated fully they do taste chalky - they can take a bit longer to rehydrate than other foods

I subscribed to your channel today. enjoying you videos. I noticed freeze dried onions that they do not stick together. when I did onions they are sticking together. before I got my freezer I did dehydrate onions I know they were dry but still stick together. even when I freeze dry them. I use mostly yellow onions . Any thought on this would be helpful. Thank YOu

You should've probably removed the oxygen absorbers before pouring hot water on them.
We generally do, but sometimes they slip by.
How the heck do you freeze dry carrots? All mine turn white and smell like chemicals. Even in mixed veggies.
Freeze dried carrots fade quickly if exposed to light - so we either use them quickly or keep them in mylar - I haven't had issues with them smelling like chemicals.
wish someone in science would actually check the contents in nutritional values before and after............. cooking in bacon greases? wow... no! lol yea cast iron are the alternate best. last generation"s".
they have checked the nutritional contents before and after freeze drying .. freeze drying retains 97% of the foods nutritional value making it the best method for shelf stable food preservation .. and I guess we'll have to agree to disagree on bacon grease and cast iron -
