Well, I'm no professional, but I think you have to be quick and flexible, very light on your feet with fast reflexes, the best strategy is to AVOID the leg kick over and over again. and that requires speed and quickness/dodging, pivoting, quickly. But also you do have to spend some time literally letting someone kick you in practice (lightly at first, but building in intensity) to learn to deal with the pain and get desensitized to it and letting someone kick you also teaches you your best way to defend against it. Each fighters body is so different that each fighter can develope their own way of dealing with a low leg kick. You also have to study your oponent and be aware if they throw alot of kicks, then you have to prepare for it especially. Top heavy, slow moving punch focused fighters will never be kings in Kickboxing. You have to get bouncy and keep pivoting, if your stance is very predictable then that thigh will become the biggest easiest target.
