I told my wife once that usually when people say they're getting tired of grilled food what they're really tired of is smoke flavor. so you had the grill at 325ish when you started, did you have to add more coals or just let it burn out while you did your cooking? I think my biggest Q'ing sin is starting with too much heat. I will be trying this out tomorrow, wish me luck and thanks for the video
Yes roughly, and definitely don't need to add more coals. Pork steaks are a fairly quick cook. I know it's odd being that it takes a shoulder so long to get done.

I have never had pork steaks before. Is it better to buy thin cuts and direct grill, or a thicker cut and cook them indirect ?
Either way honestly. I prefer them around 3/4 of and inch and kind of cook them grilled or smoked. Both are delicious
