      using coconut substitute is leaning more toward a Thai style curry and thats great for vegan or lactose free. This recipe is a penny pinches recipe my grandmother & mother used many times when money was tight.
      for vegan also omit the sausages for a seitan substitute or load it all up with vegies you love.

    that looks yummy... i've only eaten curry at this thai place up the road... i love it but can't afford to eat there... this is something i could handle... thanks for sharing

    God that looks good! I love everything curry. You could fry up some worms in a curry sauce and i would eat them.

      Thanks BC, it is nothing like the Asian type curries with 50 different spices in it. But it is a good hearty curry and I love it. You can add as many or as little veggies as you like if you have to stretch it further.

      your not meant to sear/BBQ the sausages. you boil them so the fat comes out of the sausages and your curry sauce doesn't go greasy and split and look like curried cottage cheese.
