The catapult does work you line up with it then from the top toolbar open jayshrike carriers, go to catapult, activate catapult, activate holdback, then go full power and click ready to launch. You'll be launched in a few seconds

I landed an Airbus Beluga on an aircraft carrier in PTFS without crashing first try, I had to do a very low speed, max flaps and the back gear had to carefully touch down at the start of the carrier and once before touchdown, I had to reverse thrust as well, and it was successful first try on the so-called in PTFS “HMS Queen Elizabeth”

The reasoning of the color changes of water behind the carrier is cause bubbles/froth/wake are white because the air causes a very low density of water there, which causes the water to be much less absorptive of visible light; and therefore, they reflect more/all of the visible spectrum (angle of incidence/reflectance dependant) so it's definitely realistic
