    If you add the option to rate the generated stir-fry,you wold have some really interesting data.

    • @boobrowsky
      @boobrowsky 5 ปีที่แล้ว +7

      but if its random generator then its kinda hard because then you have to create database and ad next collumns and then make script to roll out records but not just randomize options :P
      takes away mos of magic IMO

      @MrBroady02 4 ปีที่แล้ว +21

      4800 dishes is not a lot at all, more youtube is uploaded daily than you could watch in a lifetime. Complimenting the random button, you could have favourites (top rated) and trending recipes. Throw in some keywords on the reviews as to how it tasted (light, refreshing, filling, comfort, zesty etc) and you'd have some fantastic filters going on.

    How about the idea that you make it possible for people on your website to entre their ingredients they have at home and the website tells people which of these 4800 Stir-Fry recepies they already can make and maybe which 1 or 2 ingredients they would need to buy in addition to make other recepies?

      Sting60000 there is already an app and website for this called supercook.com. 😇 you can just add the ingredients you have and even bold items that you absolutely want to use (i.e. they expire soon or you have too much of this ingredient) and they will show you a list of recipes that have all your ingredients or most of it/then tell you what else you'll need to begin cooking!

    This is how I usually cook. It's so simple, you can use almost any ingredients, as long as you have some meat, veggies and some carbs like rice or noodles.
    You can even change the seasoning and do the same with potatos as carbs. There are so many variations.

    This might be one of your best video. The main thing I plan to do right now is make a “basic” stir fry sauce that can be used for everything. I might tweak your recipe slightly. I might use Mirin or maybe brown sugar as it has slightly different flavour to white sugar. I’m also thinking of adding a touch of fish sauce because that has a beautiful flavour. Would love to hear other people tweaks in this. Oh man I’m so excited!
    You’re a very talented guy and I don’t just mean cooking. I can’t believe you know how to code too.

    my two cent:
    I am 100% for having all the ingredients partly cooked prior to the final stir up EXCEPT for aromatics.
    The whole logic behind hard stir fry is to have a raging wok with very hot oil, which is where the "wok hei" comes from (evaporating oil)
    As soon as you add your ingredients, which contain water, water evaporates and bring up the whole oil and ingredient flavor with it. And is why, as you have correctly pointed out, stir fries should be eaten immediately after plated.
    Therefore, if a person cook aromatics like ginger and spring onions ahead of time, half of the flavor of those aromatics are lost.
    My fool-proof way of "stir fry anything" is to:
    1- heat the wok on high, add some (two table spoon-ish?) high smoke point oil like peanut oil
    2 - when you begin to see the oil steaming, count from 1 - 5 then add ginger slices, stir occasionally until ginger softens or you smell the ginger aroma or you hear the "popping" noise in the oil beginning to subdue. This should not take more than 20 or so seconds.
    3 - stir in whatever half-cooked ingredient into the wok, bring the fire on high if needed to maintain heat
    4 - add some rice wine (or whatever your poison!), preferably with a high alcoholic content. You want the flare, which will die off quickly as the alcohol cooked off
    5 - add the sauce of choice (soy, oyster sauce, garlic works great) and fold the ingredients
    6 - finally, add a handful (you can never add too many) of spring onion (the green leafy bit only. You can add the stalky whites together with ginger at step 1, they will turn out very sweet and nice once soften). Fold the ingredients together until spring onion soften
    This is what we do at my restaurant here in Hong Kong! :D

      Not really clear on why you need to light alcohol on fire. Seems pointless.

    • @cowabunka
      @cowabunka 6 ปีที่แล้ว +14

      why would anyone add alcohol to any dish? the flavour
      In particular, the flare brings up many of the aromatics to their evaporated state, which may otherwise not be in the air.
      and that is key to stir fry: the aromatics, the smell, the flavour in the air
      Try having stir fry when you have a stuffy nose. Or in fact, try having any dish when you have a blocked nose. You'll see what I mean.
      Besides, when in doubt, experiment. Try frying up something without wine and something with wine and see if you can taste the difference.

    I love mint in stir fries. I think I picked it up from a fellow called Neil Perry who used to be on Saturday morning TV. Pork, Lemongrass Paste, Chilli, Mint and Sugar Snaps.
    Also, he did the same thing as you by cooking each ingredient separately then combining at the end. One of the best cooking tips for stir frying I've ever learned. Otherwise it just gets soggy, innit.

    This is a GENIUS idea Alex! I'm sure you already put a ton of work into the code and program but I hope someday soon you can incorporate recipes for a variety of sauces. In my eyes, they're the most important part of the dish. You can add any veggies, noodles, and protein to a dish but the sauce makes or breaks it! My go to is soy sauce, garlic, ginger, chili, sesame oil, rice vinegar, and brown sugar. 🤗👩🏻‍🍳

    thanks for the video Alex. Im a bad cook because i cant keep every thing in mind when i try to cook, but stir-frying might be my calling :) its 1-2 pans and its an active way of cooking

    Alex I've watched your videos for longer than I can remember now, but I didn't quite realise how awesome I thought you were until I thought I saw you strolling through Ikea yesterday and was ready to run over to some poor curly-headed french dude and start excitedly shouting at him
    Love you man, keep up the great work. Your videos never fail to both entertain, inspire and inform me!
