You should try playing Forza Horizon 5 together. I'm sure you could come up with some crazy races!
Gentlemen, you can have the game automatically generate mountainous terrain so you won't have to build the entire "mountain". Removing blocks is always quicker than building, especially in creative mode where you can use TNT to blow up chunks of terrain at a time
