Carter, I have to tell you, I am so very grateful for all the wonderful new recipes I have written down today. I haven't seen my husband this excited over recipes before, but his job takes him on the road five days a week (teaching EV classes to dealerships). He stays in several hotels, eating three meals a day at restaurants, and comes home on Friday night to spend the weekend with an upset stomach. His hotel rooms all have tiny kitchens so he can open up a jar of his choice and have a home-cooked meal. He says to tell you thank you, thank you.!! I’ve been watching your TH-cam videos for about 5 months now and I just love your videos. I use to can a lot when my children was small and also I grew up helping my Dad & Mom in the garden and helping can all the vegetables that we grew. I’m 71 years old now and have been a widow since December 2014. It is so hard to cook good healthy meals for one person. I find myself just snacking a lot of the times. I did drag my old canner out a couple of years ago and canned some green beans. But not thinking, I canned them in quart jars instead of pint jars. So basically I just open the green beans when the kids will be here. I reckon I had forgotten how heavy my canner was. I purchased it in 1970 so it was really heavy. I ended up giving it to my Son and daughter-in-law because it really was just to heavy for me to use. After I started watching your videos I knew I wanted to start canning some things that would be easy and quick for me to fix for myself. I actually started looking for a new canner that i could use now at my age. So, I did some research and ended up buying a Denali canner because the American canner just wasn’t in my budget. Haven’t got to try it yet because I ended having to have a major surgery in January and was in the hospital for 27 days. But, boy am I itching to get started on canning some of your recipes. One thing I thought I would never see was my son and daughter gardening and canning but they both have really gotten into it. Does this old heart good to see them enjoy gardening and canning. Sorry about the book that I’ve just written but I wanted you to know how much I enjoy them. I’ve told both my daughter and daughter-in-law to watch your videos. Keep those videos coming. ❤

@@loiscole5651 Thanks, Lois! I try to post every Wednesday and Sunday. I get most of my jars from Target. I would love to say I found them at yard sales, thrift stores, etc, but I've never had any luck finding second hand jars. I do also go to Walmart for the squatty 1/2 pint Kerr jars.

I have pulled curry pork, mojito lime chicken with cilantro, meatballs and Mississippi pork roast for sandwiches. I keep beef stew, chicken marsala, beef burgundy and many more for dinners!! Love the recipe ideas!
In case you didn’t know…rubbing alcohol removes sharpie. If you have a dollar tree near you, pick up a box of alcohol swabs (I forget the actual name). They’re individually wrapped little wipes that are perfect for removing the writing on used lids.
Of course! I use hand sanitizer. It works pretty well, but there are a couple of marker colors that are quite stubborn. Have you found that straight alcohol works well on red or green ink?
@@growandpreserve I’ve only used rubbing alcohol on blue and black ink but, there’s a product called Oops! that takes pretty much everything off. In recent years, I’ve had difficulty finding it in regular stores but, I did find it at Sherwin Williams once. I believe it has been discontinued and replaced with Goof Off…it is NOT the same. If you find a can, pick it up…a small can will last years. p.s. it’ll even take a grease or butter stain out of clothing…just saying lol
Looks great! I will try the Italian Beef. I already make the Chipotle Beef (in pints) -- we generally use it for taco filling. When we want steak & cheese subs/sandwiches, I pull out one of our vac-sealed packages of Ribeye slices we make. But your method is very appealing, so I'll give it a try. For canning, we usually buy 2 large Sirloin roasts at Costco to do our pressure-canning beef cubes. I get 16-17 pints. Cut the roast in 1 1/2-inch slices, then cube-cut each slice for the meat cubes. Beef is incredibly tender from the pressure-canning, isn't it?! After seeing you with the electric canner a while back, I decided to get one to add to my canning arsenal. I got the smaller one for smaller batches. It's incredibly easy to use! I keep it on a counter at the far end of a kitchen-eating area of our large kitchen. My husband added a GFI electric outlet just for the canner....so I have a very special 'spot' for my electric canner. 😂

I use pint jars for refrigerator oatmeal, which is 1/2 cup old fashioned rolled oats, 2 shakes of the salt shaker, and 1/2 cup boiling water to cover the oats. I will make several after dinner and let them cool on the counter before refrigerating them, in the morning I will take one out when I get up, and when I am ready to eat microwave it for 2 -3 minutes, add butter, milk, and sugar, then eat it out of the jar. I have been doing this for some time and have not had any jar breakage.
if you heat food in a canning jar it may not cook evenly. personally, i used to take my soup in a jar because its easy for traveling to work. I had no difficulty heating the soup. there is a sign of a microwave with wavy line which is the sign you can microwave the jar. Love your show. I’m going to add mushrooms and a splash of white wine to the chipotle beef. There was a chipotle beef pasta I used to get at a fancy restaurant in college station, Texas. It was delicious.

Your sandwich choices look great. I have pulled pork with red onions and barbecue sauce in jars in my pantry. I also have something we call pizza jars it's Italian sausage with onion, sauce, pepper and turkey pepperoni. We pour this on french bread and top with whatever cheese we have. Yesterday I canned unstuffed cabbage with ground beef I have never tried it but I think I could eat that on a toasted bunn.

I just made tarragon Dijon chicken with dried grapes cashews and craisins. But I also have French dip onion sands with provolone if you'd prefer😊. I bought some of those lids but was disappointed they were made in China. I just ordered superb because they aren't. I'm still using up golden harvest and balls but my failure rate with ball has been about 2 per 18 in canner. Lastly no on microwave for me. Mainly because glass gets soooo hot. Love your recipes! Decided to take your advice on tomatoes. They are still in greenhouse.
I'm coming to your house for lunch! Yum! I hear you on Made in China. I'm always disappointed when something I like is not made here. My starts no longer fit on their designated shelves in the grow room. They've been outside all day and the warmer nights. Anything much below 50 and I'm lugging them inside to hang out on the floor. Guess what that means I'm doing tonight! ;-) Hopefully, another 10 days or so, and the nighttime temps will cooperate.

Fingers crossed. As a mostly carnivore I’d like to grow and can sweet potatoes in 2024. If you can do a video I’ll watch and forward it to myself for 2024!
Hey, Vicki! For the moment, I have given up canning sweet potatoes. I just don't like the texture of the end product. This past year, my garden sweet potatoes stored 11 months. As the last handful started to sprout, I diced, roasted and froze them in serving size portions for this Winter. That works particularly well for me. @@vickikenton5439

I make a juniper/ginger/Morita “bbq” sauce that I can. I also raw packed some pork. Mixing some of that sauce with the pork and topping with smoked Gouda is one of my best sandwich go-to’s. I also use this mix on pizza😊
Yes! You can double stack in the Presto Electric with the jelly jars even without a second rack, but that feels so tenuous to me! The Kerr jars seem tailor-made for that purpose. Good to see you, Tracie!
i think i am your new best fan! absolutely love your tutorials> if you were to come to my house for a sandwich i would make you one of our faves. kaiser bun halved, buttered then toasted under the broiler. then i would open a jar of our home canned wild sockeye salmon, place it in a bowl and add in chopped celery, home pickled dill, green onion and mayo, a bit of salt and loads of fresh ground pepper. place this mixture in the microwave just long enough to heat through. then pile high on the toasted buns and top with grated sharp cheddar. although for you i would omit the cheese. then return to the broiler and heat till bubbly.
Wondering what that brand of chipotle chiles is, in the glass jar? Ive never seen them in a glass jar. I am becoming rather particular about additives and have yet to find a brand I totally love. I like the idea that they're all chopped up, as I have been scaling my chipotle recipes to use up the whole container so I can blend it up. All kinds of mental gymnastics just so I don't end up with weird leftovers!

Olives can't hold their own next to cherry peppers! I think I have 7 cherry pepper plants in my garden this year. There will be lots of pickled cherry peppers on my shelf by the end of the season!
I have to use my God given tools to mix. My extremely clean hands. All I have right now for a sandwich is good but boring Chkn Salad. . But after these are canned I’ll offer you a delicious Chipotle taco or an Italian beef sandwich. 😊 I like more heat so I will add a 1/8 tsp of cayenne or a tiny piece of Arbol pepper in my jar. I’ll see if that is great for my tacos.

If you were to come to my house and ask for a quick sandwich, I could make you a smoked pulled pork and canned coleslaw sandwich on an onion roll bun. I Love having meat on my canning shelf, and the canned coleslaw has been a hit. So good!
If you came to my house for a sandwich, 40 calorie Bread, 0 calorie Mayonnaise, Cucumber Slices, Tomato slices, reduced fat cheese, & Romaine Lettuce. What time should expect you and bring your cleaning crew, because nobody eats for free.

@@growandpreserve I’m a quail mom who hatches every 5 weeks & needs to cook quail every 8 weeks. I’d love to can some quail or quail breasts in a pressure canner or my electric presto canner. Fingers crossed. As a mostly carnivore I’d like to grow and can sweet potatoes in 2024. If you can do a video I’ll watch and forward it to myself for 2024!
Hey, Vicki! For the moment, I have given up canning sweet potatoes. I just don't like the texture of the end product. This past year, my garden sweet potatoes stored 11 months. As the last handful started to sprout, I diced, roasted and froze them in serving size portions for this Winter. That works particularly well for me. @@vickikenton5439

I’ve got Mississippi Pork in jars right now. It’s pretty good in a wrap or on a bun. I have home canned sloppy Joe sauce too.. I call it “Wo-Manwich”

Hi Carter! I made the Chipotle Beef, just a half batch to see if I liked it and I loved it. I used it in a burrito (I can't eat much bread) and it's so yummy. I mad a half batch of the Cottage Pie filling you did and it's delicious too so I'm very happy right now. I've got a lot of canning to do ...now all I need is LIDS! lol! Thank you!! 💜

I make a juniper/ginger/Morita “bbq” sauce that I can. I also raw packed some pork. Mixing some of that sauce with the pork and topping with smoked Gouda is one of my best sandwich go-to’s. I also use this mix on pizza😊

Yes! You can double stack in the Presto Electric with the jelly jars even without a second rack, but that feels so tenuous to me! The Kerr jars seem tailor-made for that purpose. Good to see you, Tracie!

i think i am your new best fan! absolutely love your tutorials> if you were to come to my house for a sandwich i would make you one of our faves. kaiser bun halved, buttered then toasted under the broiler. then i would open a jar of our home canned wild sockeye salmon, place it in a bowl and add in chopped celery, home pickled dill, green onion and mayo, a bit of salt and loads of fresh ground pepper. place this mixture in the microwave just long enough to heat through. then pile high on the toasted buns and top with grated sharp cheddar. although for you i would omit the cheese. then return to the broiler and heat till bubbly.

Wondering what that brand of chipotle chiles is, in the glass jar? Ive never seen them in a glass jar. I am becoming rather particular about additives and have yet to find a brand I totally love. I like the idea that they're all chopped up, as I have been scaling my chipotle recipes to use up the whole container so I can blend it up. All kinds of mental gymnastics just so I don't end up with weird leftovers!

We’re having Cubans for lunch today, I think. By the way I really like chipotles in adobo, with my eggs. I make shakshuka using a few of them. Once you get used to the heat, a wonderful raisin-y flavor emerges

Holy cow, Mama! I have to try these!! Now you have me thinking about the ingredients in a Mississippi pot roast.....May have to try that, too. If you were to ask me for a sandwich, it would have to be homemade smoked chicken salad, canned corn beef for rueben, canned pulled pork,canned ham salad , or PB&J.

Olives can't hold their own next to cherry peppers! I think I have 7 cherry pepper plants in my garden this year. There will be lots of pickled cherry peppers on my shelf by the end of the season!

I have to use my God given tools to mix. My extremely clean hands. All I have right now for a sandwich is good but boring Chkn Salad. . But after these are canned I’ll offer you a delicious Chipotle taco or an Italian beef sandwich. 😊 I like more heat so I will add a 1/8 tsp of cayenne or a tiny piece of Arbol pepper in my jar. I’ll see if that is great for my tacos.
Hands are good! My preferred method, but it seems to make some folks squeamish to watch. ;-) Hope these work out great for you!

Pretty amazing would be my guess! Do cut them top to bottom and reasonably thickly so they don't just disintegrate in the long processing.

Hmmm. Honestly, for my preferences, I wouldn't do the Italian Beef again. However, there are folks that love this combo.

If you were to come to my house and ask for a quick sandwich, I could make you a smoked pulled pork and canned coleslaw sandwich on an onion roll bun. I Love having meat on my canning shelf, and the canned coleslaw has been a hit. So good!

Anyone cannong that shows a sparkling clean kitchen stopped recording and cleaned everything up before resuming videoing. I would rather see real life, sometimes its a bit messy.
