I guess it makes sense why security breach wouldn't have a gallery like fnaf 3, sister location, or help wanted (and maybe others) with fnaf 3 and sister location the galleries with the jumpscares and the 'how it was made' for the models weren't in universe, they were only accessible through the menu which everyone knows isn't the most canon part of the games, and in help wanted it was there in universe because help wanted was a canonical in universe video game, all the games that you play in help wanted are games in the fnaf universe, if it were designed the same way in security breach (character able to move around to see different angles of the models) it would make no sense why there would be a model area in the pizzaplex, and if they did add it through the menu, it'd have to be where you can't move around to stay out of canon although there always could have been a way for you to see the models of the characters OTHER than vanny, vanessa, burntrap, or the broken versions of the animatronics, and have it in a location around the pizzaplex for those who want to see what they look like up close but can't afford to reserve an animatronic for the day or something, and at that point, with so many removals it would be more effort than its worth
