I have the wet stones from dalstrong, i try to sharpen them every other week just to maintain them, i have like 10 of them but this one is my favorite one.

How do you run your bottom vents on this cook?
For this cook I believe I had them half way open was running hot 350+

I would have rotated that bird half way through for a more even cook.
