Chef Rose, I love having greens to accompany the chicken. My access to some ingredients is limited, as I live in Southeast Texas. I think kale, or maybe baby spinach leaves would fry up well. I'm going to try it this week.

Sure you can add vetsin. You can add about 1/2 tsp.

I start frying at 330F. I do not go beyond 360F.
