Depending on which side (left, right, or middle strings) are not buzzing. For example if the left side isn't buzzing against the piece of plastic, then you have to bend the string down. You want them ALL to buzz as evenly as possible. That's how you know if they are level.

how do you determine when to push strings down vs pull them up? is it based on leveling them to neighboring notes?
