Watching your review you are talking about food you grew up with, if you can cook and come from a family that's cooks that food its tough for a restaurant to come close to that food. For example I'm British from Jamaican parents and I love to cook. I can't buy most Jamaican food from a restaurant because most restaurants are average to me. Out of 10 Jamaican restaurants maybe 1 is great to me, and very few can make food at my level. Because according to my mom, they couldn't make a profit making food like i do because I spare no expense to get my food to taste fantastic. For example my mom wanted Jamaican chicken soup. She decided to buy some..It was mostly broth and some veggies and okay. The one I made for her, had an whole chicken and tons of veggies and was in a different league. But I spared no expense to make it taste fantastic. A restaurant isn't going to do that. But at the same time most people aren't that picky.
I absolutely agree with your mom. Home cooking and restaurant cooking are 2 completely different things. I wouldn't expect a restaurant to be able to get it 100% as good, especially for the reasons you mentioned. They can get close though. They often have tools and products that most home kitchens don't have that can help them. In this case, the food I ordered is fairly simple and inexpensive to make, it just comes down to execution.

@mrbjorn6 they're definitely doing something right. Good on them though. It's very impressive how popular they've gotten.
