You could probably use Matcha for the food coloring, but Matcha will be a stronger flavor and may overpower the pistachio if you use too much. You could use ground pistachios in a cake, but pistachios flour has no gluten forming proteins so it would be best in a meringue or flourless cake or in cookies.
@@barbhenderson2930 Typically traditional gelato contains nut purees in them and is served with nuts more as a topping than in the gelato itself. But feel free to add nuts to the gelato base as you wish!!! Thanks for reaching out!!!
