You can dehydrate them without blanching but I prefer blanching mine , I think they rehydrate better A good example is celery - many people do not blanch but I do , again I think they rehydrate much better not as chewy or hard spots that do not rehydrate back as well Hope that helps , suggest trying both ways see what you prefer
I think the sweetness is more flavorful because they don’t have as earthy of a taste as red ,,,,, I love my nesco , it’s great ! I have an excaliber but only use that for larger projects and meat and jerky

I was told not to cook the beets. It adds more water to them to be dehydrated. To peel, and grate or slice. Why do you blanch yours?
