Yes you can! That's what I did initially. You have to watch them much more closely to make sure they don't burn, but it definitely works! Set the temperature as low as possible and it will work fine!

Rehydrate the kale, and pat dry. Add oil and seasonings, and dehydrate. It may work, it may not. I seriously don't know! But if you try a small amount you won't waste a bunch of kale. If it works, that would be awesome because you could have dehydrated kale in your pantry long term, and then just turn it into chips when you want chips. If you try this, be sure to let me know how it turns out for you!
