- Carioca Recipe
Carioca Dough:
-1 and 1/2 cup glutinous rice flour
-1/2 cup all-purpose flour
-1 cup water, add it little by little
Caramel Glaze:
-cooking oil that you used in frying the carioca balls
-1/2 cup brown sugar
Other materials:
-1 tbsp. for scooping the dough
-Bamboo sticks/skewer
OVERALL YIELD: 21 pcs. of Carioca balls, skewered in 7 sticks
TIPS:
1.) Poke the dough balls using a stick to prevent it from popping too much when frying it.
2.) Fry in medium-low heat and continuously mix the Carioca balls gently until light brown for even cooking.
3.) For the caramel sauce, melt the sugar in medium-low heat using the same oil you used for frying. Continue on cooking until it melts completely.
4.) Once the sugar melts, put the Carioca balls and mix it until fully coated.
5.) Skewer the Carioca balls with bamboo sticks/skewer right away after cooking.

Hi! Hindi po sya overcooked, natural lang po na nagba-brown yung sugar pag niluluto at tumitigas yung sugar pag nagco-cool down since nagthi-thicken po yung sugar syrup. Ang tawag po doon is "caramelization." Yun po yung parang sugar coating na mukhang matigas pero crunchy po sya pag kinain 😊. Thank you for watching! 😁

TIPS:
Kaya po dumidikit ang carioca kasi pwede pong magkakadikit nyo po sya nilagay. Mas maganda po na ilalagay nyo po na hindi magkakadikit bago lutuin.
Kapag niluluto na po, ilagay nyo na po ang dough balls na ginawa nyo at haluin agad para ma-coat ito ng arnibal. Kapag na-coat na, alisin nyo na po sa lutuan at ituhog na agad sa stick para po di magdidikit-dikit.
