Advice - look at the sailor as a lever through which the force of the sail is transmitted to the board. In the 'upwind' posture the sail is tilted back and the rear leg is a strong lever on which the sail force is predominant. the mast is coming at an acute angle, from the side, to force the nose of the board upwind [to the left]. In the 'downwind' posture the sail is back less and the rear leg is a lever which SHARES the force with the front leg. the mast is at a more relaxed angle, more in line with the long axis of the board, and steers downwind [to the right]. Advice - practice 10,000 times. This is why we love wndsrfng!
I was well overpowered on a JP SLW 154 - 9"5. To get back to shore I was going almost down wind. then I went down wind. It was more exiting but I felt danger. 6 seconds I was catapulted so hard I broke a new harness line. I am on the same tack. I jump in the straps hold on and hyper plane 5oo meters. get to a cove. I mcgyver the harness line. Stayed out another 2 hours. Funny though that 20 minutes the wind went back down to 15 - 20 knots. The whiplash lasted 3-4 months.
The video does a bad job explaining/showing it. For me I find it's sort of a twisting motion between upwind and downwind. To go upwind on a plane, I'll straighten my back leg and slightly twist my hips towards the rail which will bend my front leg. I also keep the sail raked back in this position as well to keep speed. I think the video was trying to explain the twist, but I'm not sure why he keeps his front leg straight. In choppy waters you would catapult in the stance shown.

When I try to go downwind I just go upwind or lose the sail
seems to me that an upright {vertical} sail position will get you better angle both up and downwind. Watch a Formula racer and see.
