- Beans and Corn Mexican Rice
Ingredients
SPICE MIX:
Salt to taste
Red chili powder to taste
Cumin powder 1.5 tbsp
Paprika powder 1.5 tbsp
Black pepper powder 1/2 tbsp
Chicken cube 1
OTHER:
Oil 3-4 tbsp
Onion 1 big, chopped
Garlic 4-5 clove, grated
Red bell pepper 1, chopped
Green bell pepper 1/2, seeds removed, chopped
Tomatoes 3, peeled and chopped
Tomato paste 1 tbsp (optional)
Rice 2 cups (soaked in water for at least 1 hour)
Boiled Kidney beans 1.5 cup or 1 can
Boiled corn 1 cup
Fresh green coriander, chopped
Apple Chicken Salad
Ingredients
Boneless chicken breast 1, boiled and chopped
Apples 2 , peeled and chopped
Salt 1 pinch
Black pepper powder 1 pinch
Mayonnaise 1/2 cup
Fresh cream 1/2 cup
Thick yogurt 1 cup (should not be sour)
Sugar 1-2 tbsp or to taste
