I totally agree with your pick: Julia Child’s recipe is quick, clean and simple, yet beautiful and gloriously yellow, as eggs should be. Hehehe I actually cook mine just like hers, except I use a fork and sometimes a spatula, and for brunch I add smoked salmon, sliced tomatoes, green onions and mushrooms. Julia child wins this one, its smth that my sleep deprived self can whip up easily whilts running late to work or school. although my personal fav way of cooking up omelets is thai-style fried omelets, oily and delish

Well i grew up whisking the egg like in the wnd version then adding eggs , adding the filling of sauted onions and tomatoes witha bit if cheese.. folding and hopingbthe fluffiness stays.. (sometimes it does) then having a hearty meal with the family usually served with friedndried fish and garlic fried rice...
I think the Julia Child omelet might've been over cooked. It should be slightly curdled and should border on the raw on the inside. The Tasty version is very much akin to that of La Mere Poulard's at Mont St. Michel in France where they cook the omelets in pans set over roaring wood-fired stoves, which I think is key in the execution of this method of omelet-making. I think it's possible that you just waited longer than you should've to cut into it, which might be why when you cut into it, it looked tuckered out. Like a soufflé, I think these types of omelets need to be eaten posthaste. Joshua's version is a bit much for me. Great video, as always! 😊
