Yoo I love your video man! :P I just got done playing all of Guitar Hero 3 as well and used the PC version, I've done it using RPCS3 for GH3 as well before. There is a lot of delay for RPCS3 when I used it! Your video is awesome and with more playing, you'd be unstoppable!

Me personally I haven't seen any lag / issues with RPCS3. But hopefully more playtime allows me to be way better!
