My favorite change will sound really minor and pointless but felt amazing at the time. In the stupid dragon temple place where you meet up with mr. fake dragon, they placed a ton of those dragon warrior guys, and they don't instantly agro, you just walk right by them and they just watch you as long as you stick to the path of heading to the dragon. It felt so awesome, seeing all these cool looking dragon dudes watching me go, especially at the final staircase with a ton of them lining the sides. Im pretty sure if you try to kill the dragon and fail, they agro permanently but i didn't test it because i hate fighting that stupid thing. Still, when i first walked into the area, killed the giant soldier guy, and noticed them watching me, it felt so weird and awesome.
Its nice to know that The Pursuer is an actually Nemesis T Type like character now that hunts in creative and fun ways instead of just occasionally showing up like 3 times in the whole game, or a least that was my experience with him in the OG version. He always looked super cool and was fun to fight but after the first few areas he just didn't show up and I was super bummed out about it.
I got my Ultra Greatsword to +10 S rank in STR and I swear to christ I swept through 3 bosses without dying in the span of a few hours. I think that sword is super busted as shit especially how its way more accessible and stronger than most special boss souls weapons. I didnt even put any enchantments. Idk why but SotFS is weirdly unbalanced. But I still love it a lot.
I think you missed a a part in one of the podcasts; because, I remember Pat ranting about how they ruined the Iron Keep. And from what I've seen of his stream he's right. For once.
Oh man, I'm the complete opposite with Pursuer showing up in other locations because of just how boring it is to fight the same boss that you already killed with little to no variation in moveset just in a different location. It doesn't help that Pursuer is so fucking easy too because of how obvious his attack patterns are, it just feels like a waste of time to fight him again.

SotFS was super weird in that Shrine of Amana is so much more manageable but now in Iron Fortress you take a wrong turn and aggro half the map.

It's the in-universe equivalent of Guts' Dragonslayer. Damn straight it better cut through enemies like butter.
I'm not a huge fan of how you need to aim UGS in this game, even when you're locked on to the opponent.
