    This by far is one of the best videos explained on Kombucha. Thank you so much! I myself have started Kombucha for my family. My boyfriend and I have diagnosed a year ago with Type 2 diabetes and have changed our diet. He loves soda and I remember myself, I love it too but I barely drink it due to kidney stones experience a decade ago. I NEVER want to go through that experience again! I have started chlorophyll, greens, less caffeine, less to no sugar (mostly to make wine or kombucha now) and more oatmeal and WATER! Oh by the way. Your green thumb videos help me tremendously as well!!!

    May have mistaken his measurements. usually do 1L water, 70g of sugar, 7-8G Tea. In 2nd ferment i put in a few tbsp to no more than 1/4 cup of whatever im using that week.

    I'm a home brewer and currently brew every month. I started making 1 gal batches and after 3 months I started making 5 gal batches. they are turning out really well. After watching this video... I have been encouraged to make more and use local natural ingredients. I have been giving my bottled bucha to my friends and they love it. I use flip top bottles and they return them to me for the next batch. I want to scale it up to another level, so I have been watching vids from other brewers and this is the one I found very helpful. I like the Awaken Tea process and would love to make the same with mine. Thanks, Tim Cox. from San Diego

    5-6 oz of tea per gallon? That's insane. I only do 8 tea bags per gallon. That's maybe 20 grams or so. I juice a pineapple and about 3 inches of ginger and add that to my freshly made Kombucha for a second ferment in swing top bottles. Totally beats the store bought stuff.

      Andy P I'm going to guess they use 5-6oz for that steel barrel, not for a gallon. Most recipes I see call for 12-30 grams too.

      Yeah that could be Dustin. I tried loose black tea and it took a month and a half. Went back to bagged Yorkshire tea and was back brewing batches in 14-17 days

    I've been brewing my own for about 3 months, this taught me more, and as i started with a kit, and watching TH-cam videos to learn. i love the flavoring part the most, now I know what O can use our slow juicer for., thanks, john keep up the good work!

    I started brewing komboocha about 3 months ago. I started because komboocha is a super concentrated probiotic. I found out 7 months ago that probiotics might be a effective treatment for a medical condition I have that standard meds didn't help, and had become completely debilitating. I wanted to be able to live again without suffering, and my Dr couldn't help. I had to try something, if it didn't work, I'd be no worse off. Thankfully, the probiotics helped, and doing komboocha fast tracked my recovery more than the other fermented foods I was eating did. And yes, I try to drink it daily to keep a therapeutic dosage level up. I'm treating komboocha like a medicine, because for me it is. The bonus is it tastes good, and curbs unhealthy habits and adds extra vitamins and minerals when I do second ferment

    Hi John....WOW just love your videos.....I watch your garden videos all the time..and NOW here you are ! Kombucha ! :) No worries with your videos being too long. If anything comes up while I'm watching, there's this thing called a "PAUSE" button. then I can resume when needed. :) Keep up the great info !

    hey just a quick question John how long does it take him to ferment those large batches that he makes I've been doing the three gallons now the time and I prefer it it takes about 10 to 14 days except I've discovered if I leave all my scobys in there ferments a lot quicker.

    GEEZ! Sweet Tea does not look like any pee I've ever seen unless the person is sick. Healthy pee is not a brown tea color. Its more yellow.

      was gonna say the same thing.. looks like a medium dark beer... if your pee is that dark ... well um.. i guess ya may wana start drinking kombucha!! Lots of it! haah.
      I love learning this stuff. Just getting into Booch brewing, been growning sprouts and making Coliadal Silver.. This is so much more fun!! (cuz its new ) Next goal: : Coconut Kiefer!!!

    I was told to not let the tea ferment in metal or ceramic so I was wondering if using those metal containers is not good to do?

      Food grade stainless steel is a fine choice for kombucha fermentation, as is glass. Plastic is questionable.

      +Debra Malinovsky Ceramic, Glass are both fine. I grow my kombucha in a ceramic container.

      If using ceramic, just be sure to find out that the glaze used contains no lead.

      The batch is acidic so you must use a high grade stainless steel otherwise it may get contaminated. Some people just use a blanket statement saying don't use any metal probably to make things simple.

    Where did they find those beautiful fermenters?? I've looked all over the internet for ones like that but all i can find are the conical shaped kind.

    In regards to the 304 stainless steel. I prefer glass but it's hard to use glass in a commercial setup mostly due to the size of vats needed. The vats in this video are made for the wine industry. White and red wine usually have a ph level between 2.8 and 3.8 so very similar to kombucha, but wine is stored in them a lot longer than kombucha would be. Vinegar is usually made in plastic or stainless as well and has even lower ph. So if scared of heavy metals in the drink (which is fair enough) stop drinking wine, vinegar, orange juice and so on...

    thanks for this, John. very informative! i love the interview at the end. really clarified things that were kind of confusing in the beginning. i got 5 min in to this and knew i'd be making a comment!
    #1. you have to use filtered water or spring water (never distilled water because all the beneficial minerals are gone and the water is essentially dead), because chlorine will kill the culture and it just won't do anything.
    #2 if you are making your own, you should never use metal containers. especially stainless steel, because you will leach nickel and other heavy metals out of the metal when it is in contact with wet foods for any period of time. always use glass or food-safe ceramic containers. and throw your plastic in the recycle bin and try to buy food in glass or aluminum. petroleum products aren't safe no matter what the industry says. we all know they lie to us.
    #3 there is no such thing as organic white cane sugar. if it is organic it is naturally brown in color because it's not processed and bleached to the point that there is nothing nutritious left in it.
    #4 if your kombucha is sweet it is either not done brewing or sweetener was added after the fermentation to flavor it and that is not good because it will acidify you. when one of the benefits is that it makes you more alkaline. why would you bother?
    #5 kombucha is EVERYDAY medicine. why would you only want the healthiest drink around only sometimes? kombucha will actually make you better able to digest and absorb all those nutrients in the green drinks you have every day because it has probiotics.

    lol, those guys were saying they like to drink kombucha because it doesn't have caffeine in it, but I've read that some of the more very recent studies seem to show that the caffeine level does not drop during fermentation.

      +MrRizo23 Caffeine content can vary from one type of kombucha to another, with some having as much as 1/3 of the caffeine of the tea that was used, and others having just a trace amount. This link explains the issue well: www.kombuchakamp.com/kombucha-and-caffeine-explained

    Is it necessary to put the sugar in before brewing the tea? I understand we need the sugars for fermentation but, incorporating it before making the tea seems like wasting a bit of sugar as the leaves would soak some up as well as possibly locking out some nutrients that would otherwise have been released into the solution if the tea leaves were not coated in sugar. Adding sugar after brewing tea while still hot seems like more proper procedure to me...any ideas?

    Would fresh fruit juice last in kombucha in the fridge? Wouldn't it go bad in the same amount of time or in a bit less of time? Or at least lose nutritional value? Maybe flavoring would have to be done just before serving, if that's the case.

    I've watched about a hundred videos on Kombucha this year and began making my own about 2 months ago. There's a problem I'm having and no one has addressed it. After the second fermentation in the bottles (around 3 days), my brew is nice and fizzy and I'll drink one of those warm. The rest goes in the fridge. When I pull one of these out of the fridge to drink it the next day or so, all the fizz is gone. The fizz comes back in a couple of days if I leave them out of the fridge, but if I leave them out too long, the alcohol content goes up to where I can notice it.
    Surely I'm not the only one with this problem. I'm wondering how others have solved it.

      B Green when it's not in the fridge that's when it's fermenting which allows CO2 to build up if it is a air tight container. this giving it the fizz! If you open it and put it back in the fridge the fizz will be gone unless you leave it out on the counter top again.
      What I do is bottle my kombucha in smaller bottles (8oz) or a bottle size that I can finish the kombucha in one sitting. That way I don't have to put it out again to get fizzy and change the flavour

      Wency Chan One of the things that has helped me tremendously is I stopped using the SCOBY I started from a bottle of GT Synergy and purchased a couple from KombuchaKamp . Com. This has made a world of difference in taste, texture, and fizziness.

    You can make fruit roll ups with the mother. Just put the mother in a blender and fruit and blend then put on to roll-up try for your dehydrater and dehydrate for 24 to 48 hours

      It's pretty similar to wine brewing as well except that wine brewers would never add vinegar to their primary. Lemon juice would work fine to acidify the primary and as a bonus would add vitamin C which the yeast needs. You generally do not want acetic acid in your brew.

    hi okraw, can i use yogi kombutcha tea instead of using gt's kombutcha? the difference between the two is that yogi kombutcha is in tea bag, can i still use it for making scoby?

      yeah GT dave's is really good. Try the original flavor to calibrate your taste buds, then branch off to the other flavors.

      +minyan Zhu GT is a national brand, they pasteurize and add stabilizers to prevent further fermentation.

    Can you measure the sugar levels? Can you be tell if the Kombucha is done by measuring the PH or sugar level or do you just need to taste it?

    Great video! This was so informative and interesting. I wish I could try some Awaken Tea Raw Kombucha! Maybe one day I will get the opportunity. :-) Corey did a great job responding to your questions clearly and concisely as well! I do wonder if infusing the tea with carbonation does any damage to the live bacteria. Anyone know? I hope this video helped their brand gain some traction! Thanks again for this great introduction to commercial kombucha brewing.

    Do you use something additional to conserve the drink? How many time is the duration of the drink? I have prepared at home but when I put it in bottles and put in the fridge, scoby appear again in my bottle in 15 days... how can avoid it??

    Been making bucha for a while now, curious cuz of the stainless steel containers and spoons
    I was told never to use metals in the brewing or to touch the liquids at all, including plastics, so i use glass and silicone spoons etc.
    so this has got me confused now, is stainless steel ok?

      To my understanding, food grade (304) stainless steel is fine to brew kombucha. Not all stainless steel is made equal. You don't want to brew in anything plastic or other metals that can leech toxins into the kombucha. Glass is a sensible choice. You have to be careful with some ceramic containers which could contain some lead in the glaze used. Using steel/plastic utensils to just stir the mix is absolutely fine, just don't leave them in the brewing vessel after you are done, lol.

    Does anybody know what the downside is to adding more than 1 cup of sugar per gallon? I just started my first brew and added about triple the sugar because I did not realize my gallon size bottle was already being used. I just received a 1 gallon jar and can dilute out my culture but don’t know if I should just eave it be until ready. Current container is half gallon. Appreciate any good advice!

      +ofribi Lichen. I remember the spelling from my many survival books. It has been and can be a survival food. But better to research it well first before eating if you can.

    I really don't know much.. but is there a way to actually test the sugar and caffeine amount in the drink to determine that it's "just right"? I've seen some videos today.. and many if the home brew folks say to just taste it.. to not get too vinagry, and not too sugary.. so that seems very confusing to me.

      Sphinx Hutc I'm thinking about a test strip? like when you test if something is too acidic.. the message seems to be that you have to constantly taste it.. and somehow should just "know"? when it's right? was hoping to get some good advice on how someone can know it's right before it gets too vinagry.

      C Reinicke the reason I say that is because everybody's taste buds are different some people like a little sugar left some people like it completely vinegar so it's up to you and your taste buds and then if you taste it and it five days out that is perfect for you then you know the next time you do it at the five-day Mark is probably going to be right on target I know mine is just about right at 7 days if it's cold weather outside or inside going to take a little bit longer the test strips won't tell you anything about your pallet

    I've read both Kombucha & Water Kefir can be used as plant fertilizer. Does anyone have any experience with this? I only use Kombucha as EM for Bokashi. I'm going to see if I can use Water Kefir as EM for Bokashi, too😀

      I am not sure about using kombucha directly as a fertilizer, it's pH may be too acidic. I do mix extra scobys into my worm compost bin, and my worm castings/tea are top notch!

      I am sure the bacterial cultures that are fermenting the tea are plenty strong enough to ward off a tiny amount of potential human influence particulates. That is one of the things that make it so great. Bacteria are territorial and when they are strong they will fight off EVERYTHING else that comes into their local environment and food sources. When we ingest these cultures, they add the bacteria to our gut and live there and help us to ward off other pathogens that might otherwise make us ill.

      Sterilize your containers, then hang your head and hands over it? That is a bit contradictory. If you want it sterile, keep it that way. If you are selling a product, food safety is important and may be required by law. If you are home brewing, do what you want.

    I got tired of drinking kombucha tea after a few years and changed over to water kefir. You should give it a try. I love glass containers for all my fermenting and or brewing.

      Rosita Chua Chlorine and fluoride in most municipal tap water will inhibit growth of the scoby. If you run it through a reverse osmosis filter, you can use it.

      He mentioned a number of things a lot of kombucha brewers tend to do that might not be preferential, compared to the way this company brews their tea, such as use of municipal water vs reverse osmosis, how the tea is flavored - before or after the brewing process of the tea, use of local raw organic fruit to sweeten the tea vs non-organic, non-local, not raw fruit (fruit concentrates or non-natural flavorings), and probably other stuff I haven't heard yet since I'm only 18 minutes in so far. The title is justified. He's actually educating us on the process whereas a lot of clickbaits have a bogus title and mostly talk about something totally different, mostly for their own vanity or other self benefit. Be vigilant, but don't be paranoid.

      I've used stainless steel to make the sweet tea but always brew in glass. so far the sweet tea touching stainless steel hasn't had a negative effect in my kombucha.
