Corrections: there were actually not two but a third one which was a close call, and also no it was not too of the 200s that crashed, the first one was a 200 the second one was a 300 and the last and third one was a 200 Those were, United Airlines Flight 585, USAir Flight 427 and Eastwind Airlines Flight 517
the 737-800 had this tiny flaw which made it automatically bank to the right when the autopilot and pilots weren’t controlling it, in 2007 a kenya airways 737-800 crashed because of this (the cause was pilot failing to turn on the autopilot and not monitoring what the plane was doing which allowed it to bank right (btw the 2 737 planes that crashed weren’t the same type, the crashed planes were a 737-200 and a 737-300)

I though the ultimate cause was not that the rudder suddenly moved by itself but that one of the valves of the PCU would jam against the housing and caused the rudder to deflect in the opposite direction to pilot input. Only the 1st incident was the 737-200 the second crash was a 737-300 (Classic) USAir Flight 427 near Pittsburgh. I was actually on a US Air 737-300 on a flight to Pittsburgh, when something similar happened on our flight. We were at cruising Altitude in Calm clear skies, not a hint of turbulence when all of a sudden the aircraft abruptly rolled over to the left 90 degrees, then again over the right 90 degrees before recovering. There was a couple of injured taken off the plane on landing, looked mostly minor. ie: Coffee spill burns. It was never confirmed whether it was the rudder problem, or something else that caused it, but my money is on the former, as it was right around the same time this was happening with the 737, and the weather was perfect.
I don't think you mentioned the fact that the Rudder issue happened to another aircraft, but the pilot managed to save it, citing the fact that he was at a much higher altitude compared to the other 2 aircraft, which was the only reason he managed to save the aircraft, check it out, it was Eastwind 517. edit: you did mention a 3rd incident, this is that
I think one important thing with the thermal shock was that it also reversed the rudder. Basically the pilots had no idea that it had happened and how to save the situation.
Basically the incident was this. United 585 was on approach to the airport and in-countered wake turbulence the pilots used the rudder to counter it they made an imput to the left however the rudder went the opposite way that they had done, 3 years after United 585 USAir 427 also crashed in the usair pilots also in-countered wake turbulence they tried to counter it by making the rudder go right but the rudder went left both planes nose dived and crashed on approach it was not till eastwind airlines flight 517 have had the same incident although that did all survive they had reported to the NTSB that the rudder peddles had been pushing back on them the NTSB thought there might be a jam in the PCU power control unit directs hydraulic fluid the PCU has 2 valves they took the PCU from usair 427 and eastwind 517 and found out that if you jam the secondary valve it will direct the fluid the the wrong place but also figured out that it can deflect the rudder in the opposite direction it took them 4 years to figure it out.

They still do. They are still used to this day in the Canadian north to fly passengers and cargo to remote towns and mining sites (one mine has a 5000 foot gravel runway complete with lights and everything.)
Ah the old P&W JT8D low bypass turbofan engines --- more akin to a turbojet than a turbofan, whereby the actual.jet engine produced the vast majority of thrust on these old planes, in modern engines, the fan produces 70-90% of the total thrust.
