Veg food thali in India has multitude of dishes and note each has unique place in thali like what is on left and what is on right what is to be served in centre etc. So also there is an order in eating, what first, what in between and what at the end. Btw, there are 100s of varieties of papad in India. Each region, each community has their own papads. The banana leaf has medicinal quality and imparts a unique flavour to the food.
This is quintessential south indian cuisine. I'm from Andhra, we eat the same food in same way but the difference, in various south indian cuisines, stem from Geography. For ex - Kerala is literally land of coconuts, hence the coconut flavour

Moshi Bhai,
porotta / paratha is not part of sadhya & neither are any non veg.
About Sadhya,
1st helping of rice should be eaten with Kerala Dal + ghee and the papad should be mixed in.
This is then followed by sambar and other runny dishes. All the side dishes should eaten along with the rice.
If you notice, all the dishes are a play on various flavours, sweet, sour, salt and spice.
You shouldn't hesitate to use your hands 😂
Porotta is best eaten with buff / buffalo or even pork curry. Personally beef doesn't taste good and I don't know why people even eat it.
Hope you are enjoying your stay in Mumbai. If you drink, their are loads of good bars of all price ranges.
