Alun Dento I Mangalorean Traditional Recipe of Cooking Colocasia with Amaranth Stem
Today, we’re diving into a delicious and traditional dish from the Mangalorean Roman Catholic cuisine - Alun Dento.
Alun Dento is a unique and authentic dish that beautifully combines colocasia, also known as taro root, with tender amaranth stems. It’s a specialty that’s especially cherished during Monthi Fest, also known as the Feast of Nativity. This vibrant celebration is not just about honoring the harvest but also about bringing families together over some truly amazing food.
This dish is not only comforting but also packed with nutrients, making it a wholesome addition to any festive meal.

Ingredients for Alun Dento:
Colocasia (Taro Root) - 250-300 grams
Peeled and cut into small cubes.
Amaranth Stems - 1 bunch
Cleaned, trimmed, and cut into sized pieces.
Hogplums - 2-3 (or to taste)
Crushed. (If you can’t find hogplums, you can use tamarind as a substitute for the tangy flavor.)
Dry Roasting Ingredients:
Boiled Rice - 1 tablespoon
Coriander Seeds - 1 tablespoon
Cumin Seeds - 1 teaspoon
Peppercorns - 10-12
Mustard Seeds - 1/4 teaspoon
Red Chillies - 10-12 (adjust to taste)
Short Chillies - 3-4 (adjust to taste)
Oil - 1 teaspoon
Garlic Flakes - 4-5
Onion - 1 large
Coconut - 1/4 cup (freshly grated)
Turmeric Powder - 1/2 teaspoon
Tamarind - Marble-sized piece
Additional Coconut for Grinding:
Coconut - 3/4 cup (freshly grated)
Seasoning Ingredients:
Ghee - 1 tablespoon
Garlic Flakes - 3-4 (optional)
Onion - 1 medium
Red Chillies - 2
Curry Leaves - A few
Instructions:
1. Dry Roasting the Spices:
Heat a Pan: Place a dry pan over medium heat.
Roast Ingredients: Add the boiled rice, coriander seeds, cumin seeds, peppercorns, mustard seeds, red chillies, short chillies, Roast until fragrant, stirring frequently to avoid burning.
Add Oil: Add 1 teaspoon of oil to the pan.
Add Onion: Add garlic flakes and the large onion and continue to roast until it turns golden brown.
Add Coconut and Turmeric: Add 1/4 cup of grated coconut and turmeric powder. Roast for a few more minutes until the coconut is slightly toasted.
Add Tamarind: Add the marble-sized tamarind and roast for another minute.
Cool Down: Remove from heat and let the mixture cool completely.
2. Grinding the Paste:
Add Coconut: Place the roasted mixture into a blender.
Add Additional Coconut: Add 3/4 cup of freshly grated coconut.
Add Water: Add a little water as needed and grind to a smooth, fine paste. You may need to adjust the water quantity based on the desired consistency.
Boil Amaranth stems with hog plums with little water, once stems are tender add colocasia and boil for another 5-8 minutes.
Mix the ground paste into your prepared colocasia, amaranth stems, and hogplums.
Let the dish simmer until the flavors meld together and the vegetables are cooked through. Adjust salt and spice levels as needed.
Preparing the Seasoning:
Heat Ghee: In a separate pan, heat 1 tablespoon of ghee.
Add Seasoning Ingredients: Add 3-4 garlic flakes (if using), 1 medium chopped onion, 2 red chillies, and a few curry leaves. Sauté until the onion becomes translucent and the garlic and red chillies release their aroma.
Keep the flame off, cover the pan for 10 minutes.
This method will give your Alun Dento or any similar dish a rich, deep flavor with a perfect blend of spices.

My heart felt thanks to you because it was my most wanted recipe. You uploaded it before Monti fest. Now i can easily do this for fest. Only one thing is that here i don't get ambade instead of that i will put tamarind pulp .
